Desserts / Fast Ed's steamed cheesecake from BHG
« on: June 19, 2009, 01:01:52 pm »
Name of Recipe:Steamed cheesecake
Number of People:6?
Ingredients:
500g Philadelphia cream cheese
2/3 cup castor sugar
6 eggs
1-1/2 tspns vanilla extract
200 mls thickened cream
200g raspberry conserve

Preparation: Mix cream cheese and sugar together , add eggs, vanilla and cream and mix until combined.  Pour into a 20cm lined ceramic dish.
Mix 100g of the slightly warmed conserve through the cream cheese mix with the tail of a spoon to get a marbled effect.  Wrap the dish in 3 layers of clingfilm and place in the varoma dish.

Pour in a litre boiling water into the TM bowl, place the varoma on top and steam for 1-2 hours.  The cheesecake is cooked when it is firm to the touch all over the top and the sides are coming away from the edges.  Refrigerate 1/2 hour.

Slightly warm the remaining conserve with juice of 1/2 lemon and spoon over the cheesecake.  Place back in the fridge for 10 minutes.

Hope this is OK everyone, someone can put the mixing times in if they wish.  Now all we need is someone to try it and let us know if it works in the TMX. ;D ;D

TMX Method

This is what I did for 1/2 the recipe:-

Into the TM bowl I put a 250g packet Philly cream cheese (mind you, it weighed 230g so maybe the scales aren't that accurate after all), 75g castor sugar, 3 x 50g eggs (even these varied - 50, 55 & 60g), 1/2 tspn vanilla concentrated extract, 100mls thickened cream (I used light cream because that is what I had so don't know whether this affects the finished product or not). Blitzed it for 12 seconds on speed 6.

Prepared 4 x 200ml ramekins by spraying and placing a circle of baking paper in the bottom.  Poured the mixture evenly into the ramekins.  I warmed 50 mls of the conserve and drizzled 1-1/2 teaspoons in dots onto the surface of each ramekin. There is no need to run a skewer through to marble the mixture the dots do just fine.

Covered 2 completely in plastic wrap (like a parcel) and the other 2 in alfoil the same way, just to see the difference for those of you who don't like using plastic wrap. Had 4 layers on the top that way.

Placed 1 litre boiling water in the bowl with the varoma dish on top with the 4 little cheesecakes fitting snuggly in there. Set temperature to varoma, 60 minutes  on speed 3.  I checked them at 40 and 50 minutes but decided to leave them there for the whole hour.

I had 1-1/2 mc's full of boiling water left at the end of the hour but there was still enough in there at the 40 and 50 minute mark.  Don't know if I should have let it get that low so maybe top up with more boiling water at the 40 minute mark.

The cheesecake swells a lot and those with the plastic wrap on top fared a little better than the alfoil ones as the plastic wrap gives and the alfoil doesn't (unless you pleat it at the beginning.) I unwrapped them and placed them straight into the fridge for 1/2 hour (maybe I should have let them cool a little first on the sink).  The middle sunk when cold but that wasn't a problem - I just poured the combined lemonjuice and remaining conserve in there.

They were really nice and next time I will do the big one in a casserole dish.  I'm sure it will need a lot more than an hour though and I will definitely need some more people here to help me eat it

I wrote the recipe down for the cheesecake and was going to suggest we could do it in the Varoma, maybe even little ones if a big one won't fit.  Where will I put it - in desserts?   I also was disappointed it was called a 'food processor' but they aren't going to advertise something without money changing hands are they?

I'm new to thermo-mixing

You can't hide from us in the Questions topic Maggie, we will find newcomers anywhere ;) ;) Welcome to our wonderful world, hope to hear more from you. Anyone who can bake bread successfully so early in their TMX career earns my respect  & admiration immediately.

Hope you can feel the love Cookie :D :D :D  Tell me, how big are those ramekins you used (1/2cup, 1 cup?) I haven't had a steamed pudding for years, probably not since I lived at home with Mum and Dad so yes, you've got me too with this one. :-* :-*

Just made these Trudy and had to compromise as I didn't have enough ginger powder (I remembered what Bron said, never not do a recipe because you don't have the right ingredient so I used 1t ginger, 1/2t cinnamon and 1/2t nutmeg) and they were delicious.  Cooked them 15 minutes so they were nice and crunchy.  Will use 3 trays next time, not 2 as they mostly joined together but that wasn't a problem.  Mum will be getting the bulk of them otherwise I will eat too many of them!  Thanks for posting this recipe.

Send him to the UK and see if Caroline can sort him out for you ;D ;D ;D   Seriously though, just grate the vegies he won't eat and put them in other things and keep trying.  I know of one child who will only eat chicken nuggets and potato crisps - not related to me thank goodness!

What, you don't buy those write on label , zip-lock bags Thermomixer!  I had the chance of getting a chest freezer for nothing 4 years ago but DH asked me if I really needed it as I would only fill it ;D ;D  I have a small freezer plus the fridge one and for just the 2 of us I really didn't need a huge chest freezer as well but I would have had fun filling it ;D ;D ;D My new year's resolution every year has been to use up what is in the freezers and start again but it just never happens.

Good call bron - much of what I would need is in the freezer ready for blitzing - cubes of frozen stock, yoghurt, coconut milk, cubed meats frozen on  flat tray then placed in bags so that they can thaw to be chopped partially frozen in the TMX.
Oh to be so organised Thermomixer plus have the room to store it all :P :P :P

Bron, a cup measurement holds 250mls of liquid - I'm sure you would have something that size in your cupboard.

I like that Kathryn, when you have had enough you and the TMX are leaving!  I can see all these kids chasing you, imploring you to come back.  Let us know how the drinks go at the party ;) ;)

Missed you Bron, welcome back.  How lovely that your brother is 'one of us'.  Have you ever visited him in Australia? Looking forward to reading your postings again once you catch up - that's the worst part of having holidays, the backlog of postings you have to catch up with. :-* :-*

Thanks Thermomixer - how do you do that? Can we do it ourselves or do you have to do it for us - I am sorry to be a nuisance.

Thanks Thermomixer.  I did ask the lady in the wine shop whether I could do this and she didn't know.  Another customer told me to drink it and went on to tell me she was given stout as a youngster as she was anaemic - seems strange giving alcohol to children.

Sheree, this was yum!!! Lucky for us it made enough for 4 so we get to have it again in the next day or 2.  What do you do with your leftover stout - I know, everyone will tell me to drink it but I was wondering how long it can be kept in the fridge as I would like to do this recipe again for a visitor in a couple of weeks time, no make that 1 week's time.  I don't normally do recipes again that quickly but this one is a little beauty. Only change I made was to not blitz the onion so long (did 2 seconds on speed 5) and next time may add more meat and a little less mushroom just to satisfy my meat eating husband.  He loved it though and I think there are more meat pieces in the leftovers than there were on our first serve so that will make him happy. Thanks for the posting - love these types of meals for winter.

Ironically, I was last night talking with my 18yo and his girlfriend (of 4 years - so it will be a big thing for them) about their party they are having in a couple of weeks and making alcoholic slushies in the TMX!

Keep all your ideas coming, they will get put to great use...not just for the 18 year olds  ;) :D
Check out Bron's (mainly all hers) alcoholic drinks for the TMX in the drinks section faffa_70 eg pina colada, margarita, gin fizz, gimlet etc etc.  The kids will find plenty to choose from there.  I have them all printed out so send them around to my place so they can browse the recipes ;D ;D ;D  You might have to do a few dry runs between now and the party so you had better get them to stock up on the booze.
