« on: December 03, 2010, 01:24:12 pm »
So I am sure we have done something like this before but what are your top 10 recipes for main meals? I am inspired by Caroline mentioning the teriyaki chicken and soba noodles from motm was one of her favorite 10 minute meals ;)

Recipe Book Recipe Reviews / Ketchup from My Way of Cooking- Review

Easy recipe. Obviously not a completely smooth texture like store bought tomato sauce and a different taste than what we are used to.
But we won't be buying store bought tomato sauce anymore  ;D was loved by all the males in the house (2small and DH) I loved it too.
We had just over 1kg (30/40g extra) of tomatoes but I recommend staying to the exact measurements as we had tomato spewing out the hole of the lid. Once I removed 1 MC of the mix it was fine. Cooked right down and the spices milled smooth at the end.
5/5 for us ;D

Sorry if this has been reviewed before but I couldn't find anything when I searched for it.

Really tasty and easy.

Tweaks I used about 500g of chicken thighs cut into 4's, used only parsley, 2tbsp stock, a whole capsicum and about 10/12 button mushrooms. At the add tomatoes, stock, sugar part of the recipe, I cooked for 8mins on 100 reverse and soft then added the capsicum and mushrooms and cooked for a further 8 mins.
Was delish and enjoyed by all.

Condiments and Sauces / Elisabeth's Mayonnaise – no butterfly
« on: October 16, 2010, 03:41:15 pm »
I have been meaning to post this recipe for ages. I use one garlic clove when making this recipe.

This is a fab mayo recipe by my group leader and she gave me permission to post it here - ages ago so here goes  ;D

Ingredients

1-3 cloves of garlic, fresh, peeled - OPTIONAL
1 whole egg – straight from the fridge
25g Dijon mustard
½ tspn salt
250g oil – grapeseed works well (no EVOO)

1-2tspn lemon juice, to taste

Method

Chop garlic for 5 sec/speed 7. Omit if lemon flavour mayo is wanted.
Add whole egg, mustard and salt.
Mix together for 1 minute/37degrees/speed 4.
Open lid and distribute with your spatula any mustard sitting on your blades or base of bowl.
Close lid and put a measuring jug (pyrex or any other) on top of the lid. Set scales and pour 250g oil in your measuring jug. Remove the measuring jug and put MC in place.
With blades running on speed 4 and MC in place, pour oil slowly in a steady stream, onto the lid of the TM. Resist the temptation to lift the MC and look.
Push MC down if it’s trying to lift itself. Once all the oil has run through, the noise of the blades running has changed and your mayo is ready.

Do the taste test and add lemon juice with blades running again on speed 4.
I add lemon juice at the very end of making the mayo, more as a condiment than an ingredient. Omit lemon juice altogether if garlic flavour/aioli is wanted.

Enjoy!

Chit Chat / Bokashi
« on: September 27, 2010, 04:13:10 pm »
Does anyone else here have a Bokashi bucket?  I have a green frog bucket http://www.bokashi.com.au/Products.htm and I am loving it :) It works so well with the thermomix. I just blitz up all the scraps that I have collected through the day ( kept in the fridge in a container ) at the end of the day after cooking dinner, sprinkle the bokashi stuff over it and that is it. It lives in the kitchen and doesn't smell at all, and I don't have to worry about it (like I did with the worm farm). I am really looking forward to emptying it into the garden for the first time.

Chit Chat / I think it might be time for another Perth get together:)
« on: September 21, 2010, 12:58:42 am »
So after spending a fair bit of time reading over old posts whilst unable to sleep last night. I read some mentioning  our get togethers.

I think we should set a day/date for one before the crazy Christmas (shock horror) starts  ;D  :o 8)

My vote is for a morning,  Monday, Wednesday or Friday. With Friday being a child free day for me.

What do you Perthies think? MJ are you planning on coming up any time soon?

Recipe Name: Chicken with Prunes

Book Name: Meat on the Menu

Tweaking details:
I didn't have a chilli so used half a teaspoon of sambal olek
I slipped and put 190 of water
I used (shock horror) 2 massel chicken stock cubes
500g of chicken thighs cut to about 2cm cubes

Review: Very tasty :) The family enjoyed it including the kids. I found it was cooked in about 18 mins but the pieces of chicken were quite small. I would have added the prunes half way through as they broke down quite a bit. I steamed some broccoli and added it to the server after the meal was cooked and served it on rice. I think you could do one and a half or even double the recipe, however it fed two adults and two kids under 4 with a small amount left over for DH to take to work for lunch.

Score: 4.5/5

Chit Chat / I'm back :)
« on: July 25, 2010, 01:15:35 am »
Hi everyone :)

I know I have been dropping in whilst on my holiday but thought I would give you all a big wave hello and tell you I have missed you all! We arrived home on Friday evening. The kids are suffering a bit from jet lag as are we. Other than that we are fantastic if not finding it just a little difficult to adjust to the cold. My SIL still has Stephanie (my TMX) will probably get it back today or tomorrow, that is if she can bear to part with her lol!! I realized how much i really use my tm on a daily basis after our trip.  We are still at my mums place. The renovations are complete enough to move in we just need to clean and move furniture today  :-)) :o wish me luck. ;D

Chit Chat / Long time no see
« on: June 04, 2010, 02:08:26 pm »
Hi everyone I have been MIA for ages now and I really miss you all!!
Initially I decided to have a break from the Internet and then was just reading posts. Since then I have been really busy. We are renovating  ( read new kitchen YAY!) and have moved temporarily to my mum's place. Lots going on including the whole family getting sick with the flu!!!

Anyway I just wanted to post and say hi and let you all know that I am here in spirit and will be in and out over the next few months due to 4 adults sharing one computer....

Now to do a bit of catching up lol
