Seafood and Fish / Re: Fish Pie (from the UK EDC)

Just tried this recipe - great flavour.  Used latchet, salmon and a few scallops though, and leek instead of the spring onion as I don't like a super spring onion-y flavour.  Leek needs cooking a bit (after dropping onto the blades, I used a few nobs of butter, 100oC for 2,30m), and then took the leek out, chopped the parsely, added the leeks back in again.  I left the scallops out right until the last minute (ie adding to the casserole dish), but even then they were a bit overcooked, I'll probably leave them out all together next time.
REALLY delicious though, fantastic recipe, makes me want to explore the UK EDC a bit more... ;D

Recipe Requests / Re: Christmas Section

I made some brandy custard for christmas (to go with chrissie pud, brandy butter, double cream AND ice cream  :D)
Just used base custard recipe from the edc, and added the brandy in the last couple of minutes to avoid curdling.  It tasted awesome, but in retrospect, would have heated the brady to burn off a bit of the alcohol first

Made this once (from EDC) and was unimpressed, bit bland.  Tried it again tonight, but bought some pre cooked tandoor chicken thighs (from local deli) and used that instead of the chicken breast - Perfect!

Tried it as well - great tasting scrambled eggs, no doubt about it, but cleaning is still long and arduous by TM standards!!  Going to try 'coddled/baked/whatever' using the varoma in individual pots...work in progress!
