Suggestions and Complaints / Member only/post count area

I'd love it if admin could set up a member only or even post count (lowish) area on this forum for things like meet ups etc.
I don't like posting personal info on a public searchable forum, and am sure others would 'chat' more if there was a less accessible area for chat.

Recipe Book Recipe Reviews / Review - Babi Tempra - Taste of Asian

Tonight made Babi Tempra from the Asian cookbook,  Pork with lime and soy.
But I made it with chicken thighs as suggested and only cooked for 30 mins.

Was really nice. I also added some veg 15 mins (next time will do 10 mins, not sure why I put them in early, we like our veg crispy, though wasn't overcooked at all) before the end. All cooked great.
A lovely slightly sweet taste the kids loved. Surprisingly loads of sauce which you could even thicken, I really had wondered if there would be enough sauce at all.
On the will make again list. We all love lime.

Had this tonight.
This was a very easy and quick stir fry (as stir fries should be) with the recipe times the vegies were lovely and crisp and perfectly cooked. The sauce was nice. Nothing exciting but a lovely flavour and everyone enjoyed. I would definitely make it again.
There were no 'different' ingredients so a good first foray into the Asia cookbook.

Chit Chat / What do people expect/want from a consultant?

Not sure what I want or expect and there have been lots of posts from disillusioned customers and about missing consultants it got me thinking.
So what do you want from a consultant? How much work do you think they should put in? What sort of follow up should you receive (or want to have) etc.
Most consultants seem to get into for a love of the machine and quite a lot leave. Are expectations too high? They don't make much per purchase and have to put in a lot of behind the scenes stuff (or so I believe) so are customers (me, lol) expecting too much.
Is being in it for the 'sale' wrong? It is a business after all.
Your thoughts - as a customer or a consultant.

Ages ago there was talk of chook food and some people where chopping up the scraps.
Ever since I've been wondering why? Is it easier for them to eat? Better for them?
I just chuck everything in and they peck at it but wondering if I should be chopping.

Starters and Snacks / Mozzarella, Tomato and Basil Muffins

Mozzarrella, Tomato and Basil muffins.
Felt like different muffins and dd1 had been keen on tomato and basil the other night so made up this recipe. I really liked these as did the older two, dd3 didn't. But a really nice light muffin.
This recipe makes 24 mini muffins.

Ingredients:
200g plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 egg
200g milk
1 tomato quartered
150g mozzarella
1 1/2 tablespoons of fresh basil
20g oil

Method:
Preheat oven to 200°
Place basil in bowl and chop 4 seconds Speed 7
Add Tomato and mozzarella and chop 6 seconds Speed 6
Add flour, baking powder, baking soda, egg, milk and oil, Mix speed 4 10 seconds.
Pour into greased mini muffin tins and bake for 15 mins.

Nay-nay - Great muffin mix for breakfast and school lunches. It only made 7 large muffins so will double mix next time. Thanks Zan.

Delightful Den - I found them quite light.  I felt like I wanted a bit more flavour so I think I might try adding a bit of Parmesan or swapping the mozzarella for feta.

Name of Recipe: Five Spice Pork with Rice and Vegetables
Number of People: 4-5
Ingredients:

700g pork fillet, sliced

2 tbsp toasted sesame oil

1 tsp Chinese 5-spice powder

1 cup of rice (or amount required)


Vegetables: (or as preferred)

2 large carrots

1 head of broccoli, 1/2 a stork of broccoli

bunch of bok choy

1/2 red capsicum

8 mushrooms

Sauce:

4 tbsp sweet chilli sauce

1 tsp sesame oil


Preparation:

1. Toss sliced pork fillet in sesame oil and 5-spice powder. Leave to marinate for a few minutes.

2. Place into 2-3 foil parcels in bottom tray of varoma.

3. Place 800mls water in bowl and cook on varoma temp for 15 mins.

4. Whilst cooking place rice in basket and rinse and prepare vegetables. Keep the hard veg eg carrots, brocolli stalk, bok choy stalk separate. Place all soft vegetables on the top varoma tray.

5. Add the rice in the basket to the bowl and hard vegetables to the bottom varoma tray and cook for 8 minutes, add top varoma tray and cook for a further 8 mins.

6. Place in thermoserver.

7. Sauce – pop juices from the pork parcels in the bowl, add 4 tbsp of sweet chilli sauce, 1 tsp of sesame oil and cook for 3 minutes, 100° speed 2.

8. Add sauce to dish and serve.

Tips/Hints:
Adapted from one of the Intellisteam recipes I mentioned in another thread.
If prefer to use noodles add them in the basket but adjust timing so they only cook for 5-10 mins (depending on type of noodles) rather than the 16 minutes for rice.

Pity nothing showing the front (well I couldn't look at the pigs blood one, lol, dd1 told me that there was a Thermomix on as I was closing my eyes. )

Just had this quarters (so from Nov) gas and electricity bill in and my gas bill is 1/2 the price of last year. All we have as mains gas is the hob (cooktop/stovetop) and the ducted heating. So being the summer bill it's just the cooking and I rarely use it anymore - just eggs really and dh uses it sometimes. So that's an extra saving of $50 a quarter. The electricity side of the bill showed no increase (a slight decrease but don't think that would be down to the the tmx as do use the oven a bit more due to bread making and obviously the tmx use) but still no increase in electricity used.

Dinner - Persian Beef and Lime Stew from MOTM (in the soup section! I had this on my list for weeks and then went to cook it and took me forever to find the recipe).

This was a 5/5 from all of us. dd3 in particular had 2nds and scraped her plate clean.
I didn't have the lemon peel so used lime zest.
dd2 and I don't like mint so use basil and parsley (also cooked with some as missed the set aside bit, lol).
Used green lentils instead of the split yellow peas.
I also added some new potatoes. And some green capsicum for the last 6 mins.

This had a really lovely flavour and despite it being such a hot day and thinking this was a bad idea with the lime it was great.

Main Dishes / Orange Maple Chicken

Name of Recipe:Orange Maple Chicken
This is from the IntelliSteam website and I converted it to Thermomix.
Number of People: 4
Ingredients:
2 skinless, boneless chicken breasts - sliced

Finely grated zest and juice of 1 small orange

2 tbsp maple syrup

¼ tsp dried chilli flakes

Salt and freshly ground black pepper

Rice and vegetables.


Preparation:
1. Place orange juice and zest, maple syrup, chilli flakes and salt and pepper in tmx bowl and mix for 5 secs on speed 4.

2. Place chicken in a bowl and pour the marinade over and place in fridge for at least 30 mins. Don't clean the bowl out.

3. Place rice in basket, 800ml water in bowl and chicken in foil boats with the marinade poured over in the Varoma.

4. Cook for 20 mins on Varoma temp speed 4.

5. With 5-10 mins left add vegetables on top varoma tray (depending on veg used, time needed to cook and personal preference).

Tips/Hints:
The original recipe was for 4 chicken breasts but that's far more than we eat. If you were doing that amount I imagine you may need to cook longer as they would be layered a lot.

I also poured the juices into the bowl, added cornflour and cooked for 3 mins to make a sauce, but found it didn't have much flavour. If wanting to make a sauce I'd add the juice from 1/2 an orange as well.

This was a really nice chicken dish, it had a lovely citrusy taste and all the kids gave it a thumbs up.

Recipe Requests / Slow cooker recipes

so does anyone have any great slow cooker /TMX recipes.
I'd like things that use the TMX to make a great all natural ingredient base but then cooked in the slow cooker.
So you get the milled spices etc flavours but the tenderness of the slow cooked meals.
And with the start of school term and the many after school activities something I can put on earlier in the day.

I think so many of them would be great TMX/Varoma meals and so easy to convert.
Def going to try a few.
