Title: Banana and oat pikelets for 2

1 small banana
2 heaped dessert spoons oats
1 heaped dessert spoon brown sugar
1/2 teaspoon vanilla
3 heaped dessert spoons plain flour
1/4 teaspoon baking powder
1/2 teaspoon bi carb
1 egg
1/2 cup milk

Place all ingredients in thermomix bowl, mix on speed 5 for 6 or 7 seconds. Stop, scrape down, mix on speed 5 for 6 or 7 seconds again.
In terms of consistency you want the batter to be reasonably thick so perhaps hold back some of the milk and adjust the consistency when scraping down.

Leave batter to rest in a separate bowl for 10 minutes or so (don't have to) while cleaning out the thermomix.

Fry generous dessert spoons full of the batter in a frying pan over medium heat with your preferred oil/butter (ghee works really well).  Turn them over when largeish bubbles appear and there appears to be a slight skin on top.

Serve with whatever you generally like with pikelets.  Butter and golden syrup for me.

Makes approximately 10 medium sized pikelets

Sounds delish I will probably try these out Monday as a cooking activity with DD :D

I have refined this a litte bit and added some weights for those who are that way inclined:

25g oats
5g psyllium
120g banana
20g brown sugar
90g plain flour
1/4 teaspoon baking powder
1/2 teaspoon bi carb
1/2 teaspoon vanilla
90g milk
1 egg

Put oats and psyllium in the bowl and mix on speed 8 for 30 seconds

Put remaining ingredients in the bowl and mix on speed 5 for 6 or 7 seconds. Stop, scrape down, mix on speed 5 for 6 or 7 seconds again.

Leave batter to rest in a separate bowl for 10 minutes or so (don't have to) while cleaning out the thermomix.

These sound great consumerate.  I think my boys would love them so I will give them a try.

I made the original version for DD and she loves them! For me personally they could be a bit sweeter but then they wouldn't be so healthy :) they freeze well too

I've made these a few times and they are great!   DD will take them in her lunchbox.  Today's double batch included 3tsp white chia seeds and I gently pushed approx 5 blueberries into each pikelet before I turned them over. Yum.

I've made them with frozen bananas once and it was fine. I did let them thaw before mixing.
