Vegetarian / Spaghettini with herbs, baby spinach and garlic crumbs

Spaghettini with herbs, baby spinach and garlic crumbs: (Converted from "Bowl Food" recipe book)
Serves 4:
Ingredients:
375g spaghettini
125g day-old crusty Italian bread, crusts removed
100 ml extra virgin olive oil, plus extra for drizzling
4 cloves garlic
400g baby spinach leaves
25 g fresh parsley
4 tblspn fresh basil
1 tblspn fresh thyme
30 g Parmeson

Preparation:
Cook pasta separately until al dente. Reserve 1/2 cup (125 ml) pasta water.
Chop parsley, basil & thyme together in TMX bowl, set aside.
Grate parmesan in TMX bowl, set aside.
Chop 2 garlic cloves in TMX bowl, and set aside.
Chop remaining 2 garlic cloves in TMX, and add crustless bread. Pulse to make coarse breadcrumbs.
Add 1 tblsp oil and cook 3 mins, Varoma temp, speed 2 or until lightly golden. Set aside garlic crumbs.
Add 2 tblsp oil, add the spinach, garlic and cook 1 min, Varoma temp, speed 2.
Add the herbs and cook for a further 1 minute.
Toss the spinach mixture through the pasta with the remaining oil and reserved pasta water. Divede among four serving bowls and scatter with the garlic crumbs & parmesan.

Even though I am only 26weeks pregnant, I've spent the school holidays going crazy with nesting-especially cooking! I now have a total of 18 family meals in the freezer. I feel SO organised :D

Soups / Cauliflower & Brie Cheese Soup

Name of Recipe: Cauliflower & Brie Cheese Soup
Number of People:serves 4-6
Ingredients:
1 kg cauliflower, roughly chopped
1 L vegie stock
125 g brie cheese

Preparation:
Place chopped cauliflower in bowl, chop 5 sec/speed 7
Add vegie stock
Cook 10-15min/100 deg/speed 2
Add cheese
Slowly turn dial up to speed 9 for 10-20 sec.

Main Dishes / Chicken, Feta & Spinach Triangles

Name of Recipe: Chicken, Feta & Spinach Triangles
Number of People: 4 serves
Ingredients:
1 clove garlic
1 onion quartered
20g olive oil
2 chicken breasts or approx 400g chicken thighs, 2cm cubed
1 bunch silver beet, washed and cut from stem
250g feta cheese
8 sheets puff pastry
egg/milk to brush pastry with

Preparation:
Preheat oven to 220 degrees C.
Place chicken in Varoma dish, and spinach in Varoma tray & place 1 L water in bowl.
Steam 10-15min /varoma temp/speed2
Stir chicken half way through, and to check when cooked.
Place chicken in a big bowl when cooked.
Rinse spinach and squeeze out excess water.
Remove water from TMX bowl, and place spinach in. Chop 3 sec/speed 5
Place spinach in bowl with chicken.
Place garlic and onion in bowl, chop 5 sec/speed 5
Add oil, sauté 2 min/ 100 deg/speed 1
Add feta cheese 2 sec/speed 9
Place feta & onion mixture to chicken & spinach mixture, and stir to combine.
Cut pastry sheets into quarters.
Place 2-3 heaped spoonfuls into pastry and fold sides over to make a triangle.
Place triangles on a greased oven pan and brush with egg/milk.
Cook20-30 mins until golden brown.
Serve with a salad or steamed vegies.

Recipe Requests / Souvlaki wraps?

I am cooking a HUGE  :o roast lamb tonight and thought I might use the left overs in souvlakis. I have made the tortilla's from JulieO's Enchilda's before, should I use that recipe or would it be completely different? Does any body have a souvlaki wrap recipe?

Tips and Tricks / Browning chicken pieces?

I'm trying to convert a recipe (for the first time) and wondering how would I brown diced chicken? Before TMX I would sauté the garlic and onion, then add the chicken to brown, but I'm worried the blades will mash the chicken pieces up too much ???

Babies and Kids / Appealing soup for 2 & 4 yr olds?

Has anyone got any recommendations for a soup that would be popular for 2 and 4 year olds? I've tried a tomato soup from here posted by Aussie (which my husband and I thought was delicious) and the pumpkin soup from EDC, which I thought might appeal to them because its  a bit more plain, but no, they were not keen. I know its my fault, because I have rarely cooked them soups before TMX, but now I am keen to get the soup goodness into them!

Chit Chat / Varoma demo bonuses

I have a Varoma demo booked for next Friday. At my original Thermomix demo I got a thermoserver. Can I get another one at my Varoma demo? My consultant only mentioned the Varoma cookbook, and when I asked about at thermoserver she said she would have to check, but hasn't gotten back to me. Sorry that I am repeating a topic that has been covered before, but I noticed they were all from at least last year, so thought I would ask in case things have changed in 2012.

Introduce Yourself / Hi from a pregnant mother of 2

Hi everyone,
I have had my TMX for about 3 months now, after 4-5 months of discussions with my DH. The day we purchased it I discovered I was pregnant and things went rapidly down hill from there! I have been extremely sick with no energy and my poor brand new TMX has sat on the bench collecting dust! Thankfully I am coming through the worst of it now, and feel as excited and enthusiastic as I should have when we first got it! I work 3 days, and have a DD4, and DS2, so am mainly at this stage looking for easy quick recipes that feed the whole family, with any kind of veggies and meat in it. So far I have cooked Tuna Mornay, Chilli Con Carne, Chow Mien & Mushroom Risotto, all delicious!
I'm excited to be part of this forum.
