Post by: maddy on March 01, 2010, 01:58:10 am
Name of Recipe: Vegetable soup with bacon & pasta
Number of People: 4
Ingredients:

1 onion
1 clove garlic
20g olive oil
4tsp vegetta gourmet vegetable stock (I had run out of TM stock)...or 2 Tbsb. TM veg. stock Concentrate
4 cups boiling water
500g chopped vegetables (I use a mix of carrot, celery, mushroom, zucchini)...but use what you like.
60-100g  chopped bacon
1 small tub leggos pizza sauce (garlic, onion, herb - 140g)
80g small spiral pasta
cracked black pepper

Preparation:

Place the chopped veggies into jug, and chop 5 secs - speed 4. Set aside
* I like to chop the carrots a little first, before adding the rest of the veg.*

Place in quartered onion and garlic clove, chop 5 secs - speed 5.

Add oil and bacon to onion mix, and cook 5 mins - 100c - reverse speed 1, MC off.

Mix vegetta stock with boiling water, then add into jug. Add the veggies, pizza sauce, black pepper, and pasta.
Cook 20 mins - 100c - reverse speed 1.

Once cooked, mix in some freshly grated parmesan, and serve with some chopped herbs on top if you wish

Made a crusty cob loaf to go with.....great for dunking in soup ;)

members' comments Everyone loves this recipe.

Shazzy - I added risoni instead of pasta spirals & tomato paste and some mixed herbs instead of the pizza paste.

ahoney - Made this with 220g tomato paste, 1 tsp mixed Italian herbs, corn and 2 veg stock cubes (massel).

JD - I added some of Tenina's flavour boosters - caramelized garlic paste and a cube of umami paste.

Dizzygirl - Added some curry powder for kick.

Kazza14 -  I too added my own pizza sauce (Thermomix of course) and I also added an extra rasher of bacon which I had chopped and quickly crisped up in the microwave. I also added Risoni instead of pasta shells and added a leek with the veggies.

foodgroupie - Followed the recipe to a T except for adding another 60 grams of bacon.

knittercook - I used carrots, cabbage and frozen corn as that is all I had and macaroni pasta, 1 tbs of vegetable stock, 2 rashers of bacon.

MangoJam -  left out the pasta.  We just love it with parmesan cheese liberally applied!!

Yes, the weather is becoming cooler and soon it will be soup time again - yay!  This summer didn't seem as long as previous ones but I'm sure it hasn't completely finished yet.  Thanks for the delicious looking soup maddy - things always on hand so easy to whip up.  I made MJ's pasta sauce today and it fits the description of the leggos one in your recipe so I will be using that for this soup.

Glad you enjoyed it.
I love a filling soup.....although hubby would eat 2 big bowls, eat 1/2 the cob loaf, and then ask "what's next?"   :-))

Mine is the complete opposite.  We had a bowl for lunch with a freshly baked roll and when teatime came around DH didn't want much to eat at all.  I served him up a small piece of leftover spinach & rice pie from the freezer with salad and corn on the cob but he left half of it.

JD,  I had a bowl of this tasty and filling soup for lunch today and it filled me up,  so can understand your DH not wanting much for tea.

Ohhh yummy.  Just finished making this soup, and it is so thick and rich.  Delicious.  And worked out beautifully as I had just the right amount of "sad" veggies that needing using, a little bit of tomato paste left from something else, and finished off the last of my vegie stock concentrate.  So cleaned out the fridge beautifully too.

Thanks Maddy!

Thanks Maddy, I'll make that today. I made some pizza sauce yesterday for Pizza Scrolls (http://bushgourmand.blogspot.com/2010/03/pizza-scrolls.html), so will definitely make the soup for lunch today.

We had a cold southerly wind blowing up here yesterday and DH and some friends walked down the beach to try fishing. I made this soup for them    when they got back and everyone loved it.  I didn't have the pizza sauce so In just threw some tomatoes in. very nice. Thanks Maddy.

I am just sitting here eating this for my lunch. I added risoni instead of pasta spirals and tomato paste and some mixed herbs instead of the pizza paste and it is lovely though I forgot that I had the chicken stock in there and added a little to much salt. Something to remember next time.

Thanks Maddy for a lovely recipe.

Yum Maddy that looks so nice, I nearly could smell it coming out of the computer screen. I'm definitely going to make it this week. I don't care that the kids don't like soup much they can go without lol.

Maddy,  what a great soup, had this last night with crusty home made bread of Isi'. Hubby couldn't believe it was all made in "that machine"  Whilst the bread was proving in the machine, I was getting all the ingredients together for the soup and while the bread was baking,  the soup was cooking.  Popped soup into thermoserver until bread had cooled sufficiently to slice. Just loving trying  the recipes on the forum.

Made this tonight but didn't go well (though my mum liked it), came out looking like tomato soup and nothing like the photo. I used 140g of tomato purée as Googling seemed to suggest the Small pot of Leg.. Pizza sauce was about 140g, and it made the soup very red. Also managed to goof by not chopping the carrots enough before putting them into thenTMX to chop, so they didn't end up as this enough pieces and where still surprisingly tough to chew after 20 minutes and overall taste seemed slightly off..

Rest of the batch is in the freezer but I don't picture eating them :/

I used 140g of tomato purée as Googling seemed to suggest the Small pot of Leg.. Pizza sauce was about 140g

Pizza sauce will have more sweetness, and added flavour with herbs/onion/garlic.......so it really doesn't compare with straight tomato puree, which will taste more acidic.

Also managed to goof by not chopping the carrots enough before putting them into thenTMX to chop, so they didn't end up as this enough pieces and where still surprisingly tough to chew after 20 minutes

Simply chop the carrots smaller first,  or chop the veggies a bit longer.

Made this tonight but didn't go well (though my mum liked it), came out looking like tomato soup and nothing like the photo.

the colour would determine which vegetables, and how much of each used.

overall taste seemed slightly off..
Rest of the batch is in the freezer but I don't picture eating them :/

(http://www.freesmileys.org/smileys/smiley-confused004.gif) (http://www.freesmileys.org/smileys.php).......this is one of my families favourite soups.  Maybe using ingredients as listed would give the result we enjoy.

We LOVE this soup too!  It always seems to work out perfectly, even when I vary the veggies that go into it, and it always gets rave reviews from guests.

I've made a batch this morning myself, I added some of Tenina's flavour boosters this time - caramelized garlic paste and a cube of umami paste, both the last in the jar/packet so a good way to use them up.

Made this today for lunch it was yummy. I too added my own pizza sauce (Thermomix of course) and I also added an extra rasher of bacon which I had chopped and quickly crisped up in the microwave  :P I also added Risoni instead of pasta shells and added a leek with the veggies, it was a super soup. I made edmundkostewicz's Yummy Crunchy Rolls to go with it, I love these rolls as they cook from a cold oven, its so hard to find a warm spot to prove bread at the moment :-))

On another note I just spell checked this before posting and it told me I had spelt Thermomix incorrectly it wanted me to change it to Thematics  :o   ;D

What a delicious soup !  I made it tonight for dinner but left out the pasta as I find it becomes a little gluggy in soup . It's very tasty and I highly recommend it. Hubby ate 3 bowls to my one and he's not a great soup lover. Will certainly be a regular dish over the coming winter.  :D  :D :D

Glad you enjoyed mangojam  :)
I personally don't feel the pasta goes Gluggy...just thickens the soup to how we like it.
You could always add more veg instead of the pasta though  ;)

Made this today for lunch to use up some 'odd' vegetables in the frig.  Very nice indeed, will  certainly make it again.  We have people staying with us for a few days next month, so this will be a great evening meal after having lunch at the winery, sight seeing etc.  In fact I may even chop the veges first and freeze them so it one less step to think about.  Thanks for the recipe

The original and the best  ;)
This soup gets made heaps over winter in our house!  I love how it can be made at short notice with pantry/fridge staples, and doesn't need pre-planning and defrosting anything.
