I took leftover herb and garlic pull apart and leftover hot cross buns with us on our outing to the zoo today. This was our lunch.

Yesterday I bought a burger from McDonald's, and it made me sick. Not the first time, I don't know why I ever bother. Every so often I do it again and regret it.

This morning I made another recipe from the Salads in a Jar book to have over 2 days.  This one called; 'Roast carrot & white bean hummus'.

A bunch of trimmed baby carrots, red capsicum and fresh chilli are roasted in a little olive oil with toasted, smashed cumin seeds. 
After roasting the skin is peeled from the capsicum.

The hummus is made using cannellini beans, lemon juice, little olive oil, Greek yoghurt, tahini and honey and is the base of the meal.

Baby spinach leaves tops the hummus, then the roasted veg and finished with a sprinkling of coriander leaves and Nigella seeds. I absolutely loved this and look forward to my other serve tomorrow.

Am making MB's chicken & sweetcorn soup for dinner.  ;D

Once more I love the look of your salad. I have salad every day, but the same ideas. The lovely jars make it look even better. I didn't go to the shop that sold them  a couple of weeks ago. I must try and get there.
May all dairy items in your fridge be of questionable vintage.

 I really love this little book, so many tasty combinations and I agree the jars make them more appealing.  Will be making lots from it for sure.  :)

The salad looks delicious Julie. I love the sound of the white bean hummus. The jars are darling too.
