Recipe Requests / Eggplant - Sidedish
« on: March 08, 2012, 01:16:27 am »
Hi, Has anybody got a sidedish recipe with eggplant as the main ingredient. I have grown some at home and only have a few. They are the long thin type as opposed to the large tear drop shape. Not sure if that makes any difference.

Thanks  :)

Cakes / Re: Nigella's choc chip banana muffins

Hi, I tried these yesterday and made the mistake of not checking if I had all the ingredients first!. I halved the sugar, substituted canola oil for the vegetable oil (which I managed to spill all over the thermie, benchtop and floor) and then realised I had run out of muffin cases as well!!

I was hoping to make a quick batch before school pick up and because I was rushing.. absolute chaos!

The kids still loved them so will try again and hopefully it will be a little more relaxed....

Wow, you were all right this recipe was terrific! I made it last night and although it had more 'kick' in it than I thought it would the flavours were gorgeous. I used a kilo of chicken and there was still plenty of sauce. I also made the cummin and onion naan bread to go with it and was very proud of myself (never attempted any sort of bread before!).

Highly recommend this recipe.  :D

Hi Monica, my TMX rep. sold it to me. I think she had had it for ages. Ask your rep. about it. Otherwise I can see if Vicki has another one.  ;)

Wow, I was so surprised when I read the earlier posts. I love this recipe, I've made it time and time again and everyone loves it. The only thing I do differently is cook it for 45 minutes, doesn't need the full hour in my oven. It does crack at the top but it doesn't effect the taste. I love the fact that you mill the grain. Fantastic recipe  :o

How come some posts have a blue "new" attached to them? I only joined yesterday I don't think my posts had "new" next to them or is it just my view (from my computer??) Does this make any sense at all???

Welcome MEP. I only joined the forum yesterday, so we are starting the journey together, although I have had my TMX a few months. I have just bought the Indian cook-book and hoping to try a recipe over the weekend. Good luck

Hi Frozzie, I was just going to ask you what cp's list of faves was, but the penny has dropped and I got it "CreamPuff"!
Is this the best place to come just for a chat?
Cookie1 asked if I had kids, yes a daughter 12 and son 8,pretty good eaters and are mostly willing to try new things. I made the chicken and cashew meal last night, and had to run out to a meeting, but the family and M.I.L enjoyed it, and I had it for dinner tonight and enjoyed it a lot more than I did last night.
My three favourite recipes at the moment are date, banana and walnut loaf (awesome) and in the early days I made the broccoli salad (a slightly different version from my TMX dealer) over and over again, until I was all "broccoli-ed out" and choc-chip banana muffins. The mushroom risotto is great too. I have only used the varoma twice. My first attempt was the meatloaf and DH and myself were extremely impressed.
p.s. I tried to download photo for my profile but it wouldn't work  :(

How do you get recent posts at the top of the page. It is my first day on the Forum and some topics are quite old and the old posts are the first ones I see.

Also, I noticed some posts have a blue "new". How does this work? ???

Hi All. Well one thing I found out tonight is that rice is AWESOME in the TMX!! It was the first time I had done it and the rice was perfect. I probably won't bother with the chicken and cashew recipe again. I have a great chicken & cashew stir-fry that I do in the wok and the flavour is nicer and a lot quicker. I am pleased that I tried the varoma again though as it is only the second time I have used it. Baby steps.

Thanks for your reply Dede, nice to know some-one is out there in forum land! I used about 900gm of chicken, cooking as I type, looking good so far! May have to double or quadruple the sauce! :)
