Made this tonight for dinner and.....we have a winner!!!!!

This will definitely become a regular meal at my house. It was tasty, healthy & soooooo easy!
I made the basic version & will try some variations in the future.
Thank you to everyone who contributes to this forum, you really inspire me to try new things!
My interest in cooking has returned  :)

I finally made this tonight after all the rave reviews -and yep LOVED it! I put dukkah on the chicken as per one of the suggestions, because I had a half finished packet in the cupboard, and did the garlic, onion and white wine in the sauce and DH commented 'it tasted like it was from a fancy restaurant'! I don't think he has EVER said that about my cooking before ;D

Frozzie, I have type 2 diabetes and use sweet potato instead of normal potato where I can. Sweet potato is Low GI.
Exercise is a dirty word... Every time I hear it, I wash my mouth out with chocolate

oh thanks for that DG ...at the moment we are only doing meat and veg meals which is hard on DH but we are certainly losing some weight!  :D

Did you see note j DJ substitute coconut cream
Or make a white sauce with the remaining stock and add herbs ie parsley or tarragon
Or  make a mushroom sauce
I'll keep thinking  :D :D

Made this again tonight :-)). The family love it and it is so quick and easy. I added some thinly sliced kale to the sauce tonight. Yum yum. Great all in one meal.  :)
