Title: ABC salad

This recipe is inspired by Gabrielle Langholtz's salad thken from The Green Market Cookbook. I have adapted it to TMX.

1 tablespoon of fresh ginger
Juice of 1 lime or lemon
1 to 2 tablespoons of Olive oil
Pepper.

1 large apple, cored, cut in 1/2
2 beets peeled, cut into 1/4 s
2 large carrots. Cut into chunks

1/2 cup finely sliced spring onions
1/4 cup of walnuts
Feta for sprinkling on top. Optional.

Place ginger, juice, olive oil and pepper in TMX bowl and mix on speed 9  until ginger is well chopped. Set aside.  No need to wash bowl.
Add Apple, beets and carrot to bowl and chop speed 5 for 3 seconds.  Should be  lumpy. If not fine enough, give 2 more seconds.

Place this mixture into a salad bowl and pour over dressing.. Fold in. Sprinkle over spring onions, then walnuts and Feta if using.

This sounds perfect for the weather we are all having. For us I would reduce the ginger by quite a lot as we aren't fond of it. I think it would still be very tasty.

Good idea if you don't like ginger. 1/2 mix makes quite a lot.

I just love the simplicity of this salad acookwoman -- and the flavours are my fave! I was drawn into the post by the ABC recipe but then when I read  CC's comment about UPHOLSTRY class :o I had to put in a word. Wow! I am envious and in awe! I have a few chairs here that could do with a makeover, but the cost of hiring someone to do it is prohibitive. Likewise the time and energy needed to re-do them myself means I am sitting on some quite tired-looking furniture. Good onya CC, hope you post photos to show off your work.

I am sure that no one minds you going off topic, Helene.
We all envy CC and her beautiful work at her upholstery class. Very gifted family with her DH doing the most amazing wood work.

Thanks for posting recipe Chookie. Whilst we are not having a heat wave like Perth, I will still be making. In fact we had 10 degrees F this morning - that's equivalent to minus 17 degrees C.
