This is my new favourite soup! It's so quick and tasty!  I love how thick and creamy it is and how cheesy it tastes when there really isn't that much cheese in there. Thank you Judy for sharing this recipe.  ;D

Made this today with some modifications.  I am gluten intolerant, so instead started with 40 g of white rice which I milled on speed 10 for 2-3 min, and used that in place of the flour.

I'm not sure if rice flour is more thickening than wheat flour, because this soup was SOOO thick, and I ended up using about twice the milk and it was still pretty thick.  I used the parm and an extra aged white cheddar. 

Was delicious and I would definitely make it again.  Perhaps I'll use a bit less rice flour next time, or maybe even a small potato to thicken?

Thanks Laura. I was just wondering if you could use potato flour or arrowroot in place of the plain flour, less in quantity than flour though.  If you use either of these as thickening agents now, you will know if you need to use half quantity or less.

DH made this for our dinner tonight, he doubled the quantities so we have plenty for lunch tomorrow.
It's delicious, one of our favourites recipes.

It is certainly soup weather here at the moment. I bought extra broccoli to make this. We really like it too.

Thanks, Judy.  Made this tonight and really enjoyed it.  Just added a little of Herbies Chilli Hit before serving.  Will certainly be making this again and was thinking next time to try adding a little curry powder. . .  :D

I have just put this on to cook. It is freezing here today. What we need is some warm filling soup.

Been thinking about this alllllll day. Got broccoli and some cheeses in the fridge, can't wait to get home and make it for supper!
