I’ve saved that recipe Chookie. It’s good to know that it is nice.

Yes I saw that too, where do you find a neutral flavoured coconut oil?
Thanks for the cumquat hint Chookie, if I get anymore given to me I will try that method.

I have made the butter alternative twice now.  The first time with ordinary coconut butter.   The texture was lovely but it tasted of coconut.  I am using this as a butter replacement in baking where there is coconut in the recipe.
The second time, yesterday, I made it after purchasing liquid no flavour coco butter.  This did not set up.  Will use it in cooking as an oil replacement.
Judy, it is difficult to buy off the shelf neutral flavoured coconut butter.   There is lots available but not in the shops in Ballarat.  IGA said they would order some in for me.
I think the recipe is good but you do need the solidified coconut butter.
I tried a couple of new recipes yesterday.  Converted one , a lemon slice, to TMX.  Used coconut flavoured mistake in Tahini biscuits.  Worked well.

Thanks for that information Chookie, it’s all very expensive so I don’t think I’ll bother.

I agree Judy. You also use a small bit in the recipe and unless you bake a lot or eat a lot of butter , it probably isn’t worth the expense.  I now have 2 lots that I will use in baking. I am still interested in the fact that is is difficult to source.

Both look delicious Chookie.
I made some croissant dough today and turned it into chocolate roll things. I was very pleased with the result, even if it did take me all day.

Nice baking Chookie and cookie. I’ve only made a steak and egg burger for lunch today.

Yes it was cookie and one of the dogs didn’t take his eyes off me the whole time I was eating it.
