Title: Herman the German Friendship Cake

I was recently given Herman the German Friendship Cake starter.I had great fun with Herman and the end result was a beautiful cake plus passing starters onto three friends who also enjoyed Herman's company :D

To Make Your Own Herman the German Friendship Cake Starter
INGREDIENTS
1 pkg active dry yeast(7g)
¼ cup lukewarm water
1 cup plain flour
1 cup sugar
1 cup warm milk
METHOD
1. In a small bowl, dissolve yeast in warm water for about ten minutes. Stir well.
2. Add flour and sugar. Mix thoroughly or the flour will get lumpy when you add the milk.
3. Slowly stir in warm milk. Loosely cover the mixture with a lid or plastic wrap. The mixture will get bubbly. Consider this Day 1 of the cycle, or the day you receive the starter.
For the next ten days, handle starter according to the instructions for Herman the German Friendship Cake.
German Friendship Cake: Introducing Herman
Hello. My name is Herman, I'm a sourdough cake, I'm supposed to be on the worktop for ten days without the lid on.
You cannot put me in the fridge or I will die!
If I stop bubbling I am dead. :o
Day 1 Put Herman in a large bowl capable of holding 2 litres. Stir him and loosely cover with clingfilm.( I just covered mine with a tea towel)
Day 2 Stir well.
Day 3 Stir well.
Day 4 Herman is hungry! Add the following ingredients, stir well and cover again:
110g plain flour, 220g sugar, 250ml milk.
Day 5 Stir well.
Day 6 Stir well.
Day 7 Stir well.
Day 8 Stir well.
Day 9 Herman is hungry again. Add the same ingredients as Day 4. Divide into four equal portions and give three away to friends, along with a copy of these instructions. Keep one of these portions if you want to make a new cake.
Herman No 4 stays with you and is ready to be baked the next day.
Day 10 Herman is very hungry indeed! Stir well and add the following ingredients:
220g sugar, 220g plain flour, 2 eggs, 2 heaped tsp cinnamon, 2 heaped tsp baking powder, ½ teaspoon salt, 175ml oil (sunflower or olive), 2 cooking apples, peeled, cored and cut into chunks, 140g raisins/sultanas (optional), 70g walnuts (optional).
Mix all the ingredients into Herman and put into a large greased roasting dish. Sprinkle with brown sugar and dot with 50g of butter.
Bake at 180C/gas mark 4. Check after 35 minutes — he may need 45 minutes.
A friend hates dried fruit so used a combination of 2 pears chopped with 140g of chocolate chips and 70g pecans,it was delicious
Any combination of fruits and nuts will work
Cranberry/ white chocolate/pecans
Apple/Date/walnuts
Let your imagination run wild!!!
This cake freezes well ;)

Oh wow, CC!  I remember my mum having a friendship cake starter bubbling away in the kitchen years ago when we lived in the US.  That would be 31 years ago to be precise.  I can't remember what happened to it, but we did keep it going for a long time.  Will have to renew the tradition, I think. Thanks!

Omg CC, I remember when we lived in England, my mum making a Herman cake! I can clearly remember the dilemma mum had when we went away on holidays, what to do with the starter. The secret was to make sure you had plenty of friends doing it so that you could get some back off them. I'm almost positive that we used to keep it in the fridge though. I'll have to check with mum.
I'm going to try this and see if it brings back memories.

CC, what a wonderful posting - I read it with a smile on my face whilst thinking what clear, explicit instructions were given with the recipe.  I've never heard of this before and like Marina, would love to see a photo and also know the size of the roasting dish you use. It must make one big cake if it is the size of mine.

Uni, you have lots of friends here - you could share yours with relatives or make them all for the restaurant. If it makes you feel any better, I can't think of too many of my friends that I could pass the starter onto as only a couple of them bake their own goodies and the rest would rather accept a piece of cake than have to do the feeding & cooking themselves. 

I'm sure this recipe will be tried by some of our forum members so I look forward to your photos.

I had a friendship cake years ago that I made think it was an Amish friendship cake, I would be hard pressed to give any starters away these days, none of my friends bake, they would be happy if I made them all a cake.

I remember Mum had a friendship cake going many many years ago. Well over 45 years I'd say. It was very popular until everyone in the town had starters and you couldn't give them away any more.

So can you keep Herman going? Or would you need to start a new Herman batch from day 1 again?
I could give one to my mum, sister and um,um,um,um I have no idea as most of my friends don't cook either. Maybe the MIL.
But would I have to plan it so I would be seeing these people on day 9 so for them to be able to make the cake on day 10?

I would love to make a Herman friendship cake once I know the answered to my questions. Sounds really interesting.

I think your Mum etc would treat Herman as day 1 for them dede. You could keep the 4th lot for yourself and then make another Herman in 9 days time.
CC says in step 3 of the method to treat that as day 1 or the day you receive the starter.
I hope I haven't confused you too much. :P

We had a similar frienship cake but in france it was joe.. Well in my circles lol... Think i still have some of him in th freezer.. After a while i got sick of making him so he ended up full time in the freezer 😊

I never had the starter recipe though just the feeding and cake instructions!!  Thanks for the recipe cc 😊

I suppose technically they could Dede but they would miss the fun of feeding Herman and passing on his "genes" :D
You don't have to make a starter each time just keep the 4th starter going for yourself.
You could make all four of the cakes yourself.It's sad that no one seems to bake these days.

Action speak louder than words, so I thought I would start a Herman the German Friendship Cake so the people confused with the method could see what I do everyday and hopefully the end result.

I mixed up the Herman starter as instructions.He's now in a bowl under a tea towel resting in my kitchen.This is counted as day One.
Sleep well Herman and you better start bubbling away or I will be left with egg on my face :D :D :D

No i didn’t JD, i went for a 2nd opinion yesterday which is the 1st time i have done that (2nd opinion )
I just knew it was not a chest infection (2 much pain). i am having a scan today to rule out a lung clot fingers crossed its all clear.

DH did ask "who's Herman" when I asked him to start taking photos for me,he was a bit surprised that it was just cake batter but the family know I'm a bit mad anyway :D :D

Well I've started. It doesn't look quite the same as yours CC. I have about 700mls of mixture.
And it's OK to leave it out on the bench with the milk added. The weather is still quite warm here.

I know I'm getting ahead of myself a bit here. The three batches I give away to friends and they go through the 9 days of feeding - won't they have double the mixture at the end? Will it then have to be divided into eight portions?

It looks like my first picture Michele.Just cover your Herman lightly with cling film or a lid and leave it on your kitchen worktop.You need warmth for your Herman starter to get working.My Herman is sitting in a warm place  ;D
The starters you give away to friends that then go through nine days of feeding will be only be divided by four.

Will just follow the instructions from now on and not over think it. Probably shouldn't start these things at 4am on Easter morning.

Oooh Frozzie. Of all nights I couldn't sleep - it had to be Easter.
I'm about to put some hot cross buns in the oven and make dip and cheese twists.
Hopefully will get a second wind when the family arrives.

I remember making one of these years ago. The actual cake in the end wasn't very nice, but this one looks to be a different recipe.

I agree re the old recipe that was round for ages MJ. I've decided I'm taking this one to Monkey Mia once I make it. After a while up there with no cake the morning tea gatherers will eat anything. :D :D :D

Day Eight

Day Nine.

Herman was hungry so I fed him the same feed as Day Four.
110g four
220g sugar
250g milk (again I spoiled Herman and warmed his milk)
After his feeding I divided Herman into four equal parts

Each Herman Starter is approx 430g
The three Herman starters(here in the plastic containers) can be given away with these printed instructions.

Herman the German Friendship Cake.
German Friendship Cake: Introducing Herman
Hello. My name is Herman, I'm a sourdough cake, I'm supposed to be on the worktop for ten days without the lid on.
You cannot put me in the fridge or I will die!
If I stop bubbling I am dead.
Day 1 Put Herman in a large bowl capable of holding 2 litres. Stir him and loosely cover with clingfilm.( I just covered mine with a tea towel)
Day 2 Stir well.
Day 3 Stir well.
Day 4 Herman is hungry! Add the following ingredients, stir well and cover again:
110g plain flour, 220g sugar, 250ml milk.
Day 5 Stir well.
Day 6 Stir well.
Day 7 Stir well.
Day 8 Stir well.
Day 9 Herman is hungry again. Add the same ingredients as Day 4. Divide into four equal portions and give three away to friends, along with a copy of these instructions. Keep one of these portions if you want to make a new cake.
Herman No 4 stays with you and is ready to be baked the next day.
Day 10 Herman is very hungry indeed! Stir well and add the following ingredients:
220g sugar, 220g plain flour, 2 eggs, 2 heaped tsp cinnamon, 2 heaped tsp baking powder, ½ teaspoon salt, 175ml oil (sunflower or olive), 2 cooking apples, peeled, cored and cut into chunks, 140g raisins/sultanas (optional), 70g walnuts (optional).
Mix all the ingredients into Herman and put into a large greased roasting dish. Sprinkle with brown sugar and dot with 50g of butter.
Bake at 180C/gas mark 4. Check after 35 minutes — he may need 45 minutes.

The fourth Herman is mine (in the bowl) (You can keep one of the starters if you want to start all over again)

Oh girls, I have just tuned into this thread and read the lot in one go. Thanks CC for your day by day photography. I hope the taste of Herman was worth the build up!

I made an Amish friendship cake a year or so ago. It was extremely yummy, and received high praise from the friends I shared the finished product with. However, they all thought I was totally mad to spend 10 days letting a cake brew.  You have re-inspired me - I must give it another go.

Had a small piece tonight. ;D It's beautifully moist and has a very open texture..The downside is that's it very sweet.Maybe it's because I added chocolate chips rather than dried fruit :-\
DH said it had very interesting flavours and textures,he also added that the sugar sprinkled on the top gave it a caramel flavour.
DS really enjoyed it but didn't realize there was walnuts in it :-))
Thank you friends for all your comments and encouragement whilst making Herman,I'm so glad you enjoyed the journey with me.Hopefully some of you will be inspired to make a Herman to share with your friends.

At the moment I plan to make several cakes from him, but DD informed me today that some of her work mates would love baby Hermans, so I'll have to see. Most of my friends don't make cake, they are too good.

I'm so pleased that Herman has worked for you Cookie. ;D It is a very moist cake and didn't take long to disappear in my house.
I recently spoke to a friend who had one of Herman's offspring and she used cherries soaked in Kirsch to add to her cake.

I have a Herman going in my kitchen.  I started him a few weeks ago but am careful not to share him all out at once so that I keep a bit for me and to give out another time.  We've deviated somewhat from the cake recipe and have now converted it to chocolate with cocoa powder, chocolate chips and sometimes a banana.  I confess that I'm not exact with ingredients and weights since he seems to be such a forgiving cake.

I like to make several on a Friday - the boys use it as "breakfast" cake on the weekends so I don't have to get up quite so early ;)

Another website that might give inspiration for uses of Herman....http://www.friendshipbreadkitchen.com/recipe-box . Lots of recipes using Amish Friendship Bread starter (which is basically what Herman is I think).  Only five more days till BAKE day here.  I'm going to have to find a nicer container to keep Herman in....he's in a bright green Tupperware container and neither he or I think it is very nice.  I have a Temuka crock that I found at Lifeline the other day that I think he might be happier in...just need to measure to see if he will fit....it would be nice to have a practical use for it (I collect temuka but we use it as well)

I baked my first herman a day early yesterday and gee is he yummy.  Half has already disappeared and the other half apparently will not last the day.  Herman also became a loaf of bread....which according to my son is very very good.  I did take photos but they are currently on my iPad.  Luckily I haven't given any of Herman away again because I NEED to make a chocolate Herman tomorrow for the eldest brat.  The youngest hasn't put her order in yet but managed to eat two enormous slices for breakfast so I'm sure it is coming.  I might try cutting the sugar down a little next time as it is VERY sweet.

Herman is not as sweet any more.  He has gone on a sugar free diet and is now enjoying regular feedings of just milk and flour.  Touch wood he is enjoying this greatly and is contributing to pikelets, bread and most recently a chocolate cake.  Tomorrow he will help out with some banana chic chip muffins.

I have been meaning to try my own Herman since I first read this thread a month ago! But has been getting very cold here and I am worried Herman might not like the cold :(
If you do try Herman Amy you will have to keep him warm. ;)

But since he has more of a "free-form" body shape, maybe I could just try wrapping a couple of tea towels around the dish I put him in? Do you think that would keep him warm enough CC?

Touch wood, Herman seems pretty forgiving.  I have Herman sitting in a tupperware lettuce container in the corner of my kitchen bench.  He is surviving pretty well.  I have noticed that he is more active on days when I have the dehydrator running next to him, but that is the only external heat he is getting.  I do live in Queensland so we don't get very low temperatures although we have had a few very cold days lately by my standards :).

Herman did very well yesterday in my banana choc chip muffins and as a reward got an extra feeding yesterday....actually he got it because I want to make bread today with him and I'm running out!

If you house is cold Amy you may need to keep Herman wrapped up but if you are lucky enough like stacelee to have the climate for Herman to sit on the bench do that.We have central heating with radiators,so my Herman was kept near one. :)

We are having renovations done at the moment so there are a few holes in walls where cold air (and spiders!) get in :( It is a cold house anyway though, apparently something to do with the fact that it faces south. I don't know how that works, but thats what I was told :-))
So I think Herman would need to be wrapped up. At least until the holes in the walls are patched up anyway ;)

Is central heating an English thing? ??? I have heard people talk about it on English TV shows. We just have a reverse-cycle air conditioner, but we don't have it on all the time.

Most people who live in the UK have central heating in the house Amy.Bloody freezing in winter without it :D :D We probably run our heating system about eight months of the year. :)

Had a quick look on the long range weather forecast stacelee and it's going to be cool for him.Not much above 20c :P Unfortunately I sympathize with you,you can't tell teenagers anything :-)) He's going to feel the cold :D :D :D Just stuff that jumper in his bag when he's not looking ;) ;)

I failed Herman.
He came to stay last year and got going well, but in the end composted him instead of baking because we were moving house.

Has anyone else failed Herman?

What are Herman pancakes? They sound better actually.

DH is going to start a ginger beer plant soon.

Herman is still going strong around here but he is definately on a sugar free diet.  My family found the cakes too sweet so he has morphed into a starter made on flour and milk.  I use him in everything from bread to pancakes to muffins to cakes.  By trial and error I have worked out that I can replace 125ml liquid and 75g flour (give or take) with 1 cup of Herman.  My normal pikelet/pancake mixture pre herman was


Pikelets
Ingredients:
   * 1 cup sr flour
   * 1/4 tsp bicarbonate of flour
   * pinch salt
   * 2 tbs sugar
   * 1 egg
   * 3/4 cup milk
   * 1 tsp vinegar
   * 2 tsp softened butter (or 2 tsp olive oil)

Directions:Combine flour, bicarb, salt and sugar in a food processor (or TM or just a bowl with a whisk). Add the egg, milk, vinegar and butter, blend until smooth.  Drop tablespoons of batter into hot butter and cook on both sides until well browned. Served warm with butter and jam.

Herman:
Can substitute 1 cup (250g approx) of sourdough starter for 1/2 cup milk and 75g flour (1/2 cup).

We also found the cake too sweet and I cut out the added sugar in the last 'feed', but people were saying it wasn't working, so I added it back it. I'd like to revise the amount of sugar added to half.

Herman is still dieting and seems to be happy.  I might be getting away with the no sugar because we really don't get that cold here.  I'm also feeding him every three or so days depending on how much I am using him.  The pancakes definately do not last long in this house with everyone from the kids, the husband to the chickens and dogs eating them.  The dogs get them because they are spoilt rotten (I actually buy Marie biscuits just for the dogs and "my" budgie), the chickens get the leftovers (they are spoilt too, and don't actually think they are chickens, I think they think they are dogs).

Well, I have started another Herman today - surely I can't kill him in 30 degree heat - the temp does drop overnight.
Hoping it all goes well this time as day nine - sharing day falls on 26th January - Australia Day - YEAH. I can give the starter out at the BBQ.  :D

I've completely lost the plot. I need medicating.  :-))

I went back to CC's photorial and day 1 is the day you mix the yeast, warm water and flour. So today is day 4 and Australia Day will be day 10.  ???

No matter I will work it out get up early and bake a cake to divide up for folk that can't commit to Herman.  :D

Herman is doing so well - a very proud mama here.  :D He's been fed and as CC did I warmed his milk so as he won't catch a chill. I only put half the amount of sugar in as everyone has commented what a sweetie Herman is.

As I will be going a day over now - well that's my calculation for today anyway - hopefully the pills will kick in soon and the dementia will be kept at bay - I'm going to feed Herman again on day 7 but only half the amounts of flour and milk and a quarter of the sugar as Herman is obviously sweet enough.  :D

It's a lovely moist cake - everyone enjoyed it. It was hard to give the starter away though. Could only give one away.
So I have 2 left which I will combine into one and start again.

Just saw this forum and thought I would bump up this topic...People often ask how long does Herman last...My wife has just past the 5yr mark,using the mix to bake a cake every 3 weeks. How long can he be left? We go to India for 3 weeks every year and he sits on table till we get home, good stir and we are back on track. You name it my wife has tried it..pear apple cherry strawberry marshmellow.... the list is endless. :)

Love this recipe, but as I am the only one who eats cake here, I am sure that I would eat the lot.
I have tried to tell myself that as it isSD it would be good food. But the wild yeast which develops needs the sugar and flour,  Wondering if the sugar could be reduced?
