Soups / Sopa de fideo de mi casa (home style Mexican tomato noodle soup)

Sopa de fideo de mi casa:

5 tomatoes quartered plus one extra for garnish
1 small onion quartered
750gm of chicken stock or 1 tbsp of chicken stock paste plus 750gm water
1/2 cup vegetable oil
125gm angel hair pasta broken into thirds
1/2 bunch of coriander
70 gm mozzarella to serve:





Grate mozzarella on speed 4 for about 3-5 seconds remove from bowl

Add tomatoes and onion in jug blend on speed 9 for about 5 seconds or until smooth.
Add chicken stock or stock paste and water cook for 6 minutes/100 degrees/ speed 4

Meanwhile heat oil in a frying pan on medium heat and fry pasta for 2 minutes or until golden

Add pasta to jug and cook 20 minutes/ 100 degrees/ reverse speed soft
Add coriander bunch whole and cook 10 minutes/ 100 degrees/ reverse speed soft

Remove coriander

Serve with a sprinkle of cheese and some fresh chopped tomato

I managed to salvage the mixture by adding a lot of flour but then they had a doughy texture. I had the same issue with the Okonomiyaki.

Well I have to say that this recipe was an unmitigated failure. I followed the recipe to the letter and the felafel was so mushy it just fell apart in cooking so the family are eating felafelish mush tonight. A real disappointment. I tried both pan frying and deep frying the felafel balls but both just collapsed. I have no idea what to do with the other half of the mixture now. Wishing I had some chooks.

Don't bother. >:(

These little cheesecakes were very yummy! I made them for some friends and they went own very well.

A few points you might want to know
1. The recipe states that it makes 8-12 serves. I made 5. 12 serves would be shot glass sized not really nough for a dessert.
2. The base was not a sufficient quantity for the topping recipe. I had to made extra.
3. The base sets very hard and can be hard to get your spoon through to eat it so make sure you don't press it too hard into the bottom of the glass.
4. The cheesecake is super boozy!  if you don't like that you may want to half the rum.

Mango Lassi Sorbet

Serves 2

4-5 frozen Mango cheeks
1 tsp honey
2 heaped tbsp natural yoghurt
1/2 tsp ground cardamom:



Chop up the mango cheeks a bit. Bung everything in the thermomix and blend on speed 6 for about 15-30 seconds while stirring with the spatula. Enjoy!:

This is a family favorite in my house, I also use it o make a lovely lasagna with layers of grilled veg and bechamel.
