Muesli Bars

125g margarine or butter
75g brown sugar
2 tablespoons honey
135g rolled oats
75g self raising flour
65g sweetened dried cranberries
70g dates
80g sultanas
50g  pumpkin seed kernels (pepitas)
2 tablespoons sesame seeds

Make sure the dates have no stones in them and pulse 2-3 times to chop.  Remove from the bowl.
Put margarine, sugar and honey in the bowl.
Heat 1 minute 30 seconds at 60 degrees Speed 2.
Add oats, self raising flour. Mix at speed 4-5 for 5-7 seconds or until mixed.
Add cranberries, chopped dates, sultanas, pepitas and sesame seeds.
  :-: speed 2 for about 20 seconds. Check that it is well incorporated.
Place in a lined slice tin and bake at 180 degrees celsius for 30- 35 minutes.  When they're cooled cut into bars.


This recipe was altered from a Women's Weekly recipe.
For those that are gluten intolerant possibly you could swap the flour for almond meal.
These are very tasty and may be good for school lunch boxes as they keep well.

These do look good - ? are they child friendly - are sesame and pumpkin seeds forbidden by the nutty school police ??

Cookie, these look great but they wouldn't be suitable for gluten intolerant people, even without the flour, because oats contain gluten.  I'm the only coeliac in my household though, so I'll be making these for the kids! Thanks!

I know it has been a long time since this recipe was posted but I have a gluten free variation for all those who are gluten intolerant or allergic.   This is my adapted Muesli bar slice recipe.  If you have a no nuts at school thing happening then leave out the l.s.a. and replace with L.S.P (a mix of sunflower, pepitas and linseed meal - made in TM)

½ cup sultanas
12 dates
20 dried apricots
½ cup shreaded or desicated coconut
1 cup rolled oats (for gluten free substitute with a mix of quinoa flakes, rice puffs and/or  millet puffs)
¼ - ½ raw sugar
½ cup plain flour (for gluten free substitute with all purpose plain flour)
1 tsp baking powder
150 grams butter
2 tbls spoons honey
1 egg (lightly beaten)
1-2 tbls L.S.A. (made in TM –linseed, sunflower seeds and almonds (can also add pumpkin seeds) process sp8 for 4 secs)
2 tsp sesame seeds.

Method:

1   Put dates and apricots in TM. Chop 5 secs speed 7. (Set aside).
2   Put butter, sugar and honey in TM.  Cook 3 mins 80 oc speed 3.
3   Add all other ingredients (egg last) .  Mix speed 3-4 1o secs until well combined, but not chopped up.
4   Cook for 15 minutes (180 – 200) in a slice tray lined with baking paper or until browned on top. Leave in tray for a few minutes before sliding onto a chopping board (Use the paper to help lift it out). Cut into squares and put in fridge. Nice to eat warm or cold (when it is cold it goes lovely and chewy).  Perfect lunch box treat or with a cuppa. ;) ;) ;)

At our local Farmers Market on Saturday and bought a lovely datey muslie kind of slice. It was very very soft and not baked. My one and a half year old loved it. Any ideas ladies on a recipe? She said oates, dates, honey.... not sure what else. It seems fairly similar but it was so soft and like I said uncooked! Hints apreciated.

I imagine it would have been made with a butter and honey mixture, similar to how you make honey joys. (Honey joys are made with 4 cups cornflakes, 1/3 cup sugar, 1 tbsp honey and 90g butter. The butter, honey and sugar are heated until frothy and mixed with the cereal, then put into patty pans and baked in a slow oven for 10 minutes or so.)

I've seen the butter, sugar and honey mix used for uncooked muesli slices before.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

There's the one I think cathy79 adapted which was a low gi that isn't baked and is quite nice.

I use to make this before I had to go gluten free. Very yummy !!

Choc Chip Muesli Bars
2 cups Rice Bubbles
1 cup Rolled Oats
1/2 cup dried cranberries (craisins)
3/4 cup coconut
1/2 cup chopped dried apricots
1 cup sultanas
1 tablespoon cocoa
1 cup choc bits
60g butter
1/2 cup condensed milk or honey
2 tablespoons liquid glucose

Combine the first 8 ingredients in a bowl. Place butter, condensed milk/honey and glucose in pan, stir over low heat until butter has melted. Add to dry ingredients, mix well. Press into greased foil lined lamington tray. Refrigerate till firm, cut into bars, wrap and keep in the fridge.

You could easily melt the butter,etc in the TMX. I haven't made this since I had my TMX, so don't know how long it would need. I'm sure one of the fabulous chefs on this site would be able to tell us how long it would need, so it wouldn't burn. Or just do it for 2 mins on speed 3, and if it needs longer, just do it a bit more!!!

You can also change the dried fruit around in this recipe, just add what you like!!
