I have made a few more test batches in consultation with the world expert tomato sauce taste tester (DH).  I have adjusted the recipe slightly (adjustments made in original).  I have reduced the amount of honey and increased the sugar slightly. 
He was rapped with the last batch so I may have conquered the mountain and made it to the summit  LOL   ;)

We are happy when we get to the summit squirrel - especially if we have tried a recipe several times to get it just right.  Good for you for persevering until DH gave it the thumbs up.

still have not done a blind test on DH and the kids............. i didn't set the table for dinner  :-))

How would you go when starting with fresh tomatoes instead of tomato paste? I can not have processed tomatoes in my diet due to allergy

Stef, see the link for MJ's tomato passata - read all the postings and you will come across one which was inadvertently turned into tomato paste.

i sometimes make my tomato paste on the stove top or in the TM

i tried another ketchup recipe from the forum here, but the cinnamon taste is just a big too much.

i dried some unions a while ago and can cook down some tomatoes to make tomato paste any time i can find the time..
so i definitely will try this.. just one other question.. why let it cool in the bowl with the lid on? i would expect you want to thicken it a little by removing the lid ..

This sounds like something my son would appreciate, only my supermarket doesn't sell Garlic or Onion Powder   :-\

Trying this tomorrow with super ripe small tomatoes instead of tomatopaste.. I guess the coooking down will take alot longer though.. Any ideas how many i will need compared to the paste and how long i may varoma them?
