I add my coconut cream or milk at the end of cooking and make sure it is not boiled. Smooth curry every time

Bacon and Egg Pie made with EDC Short Crust Pastry and home grown spinach.
Coconut Cup Cakes with Lime Sherbert Icing (my recipe!)
All dairy free for a hungry bunch of teenagers.

I made these twice over the weekend!
I added 1 teaspoon ground Cumin.
They were fantastic as a meal or if made smaller finger food.
They are great with chutney.

Hi Kezza I made this mustard and followed your instructions and didn't make it grainy. I thought I would make it properly first and then tweak it. BUT mine tasted very bitter and quite unpleasant!! I am not sure where I went wrong I used yellow (normal) mustard seed and followed the instructions carefully. Do you have any hints or advice? I am determined to master this recipe.

I have a child who was diagnosed with a dairy allergy at 13 years. He was very ill for quite some time prior to diagnosis and would frequently vomit and feel very unwell. The process of diagnosis took a little while but was well worth the effort.
I would suggest talking to your GP first as it could be a range of problems which need to be eliminated and a referral made.
A food diary is also really important and you need to record EVERYTHING your daughter eats as it may not actually be dairy that is the problem.
An allergist specialist who works with a dietitian is quite a good way to go if it is considered necessary.
It is quite difficult to accurately diagnose a food allergy (or intolerance) and is usually done through elimination diet and then food challenges. I found it was good to have support from a dietitian who was experienced in food allergies and adolescents. They can make sure all the child's nutritional needs are met. We didn't need to see her much as she had really good information and was empowering for my son.

I have a quick question!
Just about to make this beautiful sounding mustard and have ingredients soaking overnight.
Can I mix this on reverse at a slower speed for longer to keep more of a grainy texture or is the idea to whip it and have a smooth consistency?
I really like the grainy texture do you think it would work?

I make yogurt in small jars for individual serves (200mls per jar) I put a spoonful of Nutella (home made or bought) in the bottom of each jar and pour yogurt over Nutella and put int yogurt maker to set. You can stir Nutella through or just get small pieces in your mouth as you eat it. You can do the same with jam also. I use a European style yogurt maker (bought in Aus) so have the option of individual jars.

I substitute Nuttelex for butter, or margarine in all recipes. I substitute weight for weight.
I have not had a failure yet.  Nuttelex was suggested to me by a dietitian when my son was diagnosed with an allergy to dairy proteins. There is a lite version of Nuttelex and an olive oil one. I mostly just use the regular one and substitute Nuttelex where ever butter is used in a recipe. I also substitute soy, rice or oat milk for dairy milk.
I prefer Nuttelex to lactose free margarine I think it is healthier and the whole family can use it.
Being dairy free is now quite easy.

You can make this recipe with Nuttelex instead of butter and it will be dairy free and therfore have no lactose.
It is just as tasty made with this substitution.
I make all my citrus butters with Nuttelex as this is a dairy free home.

This recipe has quickly become a family favorite!
It is a well set out easy to follow recipe which has required no tweaking.
It is very tasty and a great meal for a busy family in the middle of the week as it is easy to prepare.
If there are any leftovers (rare) it is great to take for lunch the next day.
