We are having baked beans with Frankfurt’s chopped up and folded through. Salad to go with it.

 Pasta bol tonight. I think we have 3 extras tonight.    Cookie its a microwave pressure cooker, cooks great in 30 minutes. I just joined tupperware, cause I love cooking / baking.  Used it the last 2 nights, so fast. Still have my thermies also.

Peter Rolland catering in Melbourne is famous for his chicken sandwiches.  They are served at the Cup and other special events.  I did a copy cat recipe for lunch.  Roast chicken, mostly breast.  Cut up small, mixed with a generous amount of TMX Mayo, chives SAnd P  and a squeeze of lemon juice.  Butter fresh bread, spread generous amount of sloppy filling and top with second slice of bread. He trims the crusts off. I left them on. Delicious. I also used Japanese Milk bread made with Laucke grain mix.

I used to love a nice sandwich Chookie, those big trays Costco sell are very nice - so much filling in each piece and they keep for days in the fridge after an event.  I used to buy them for special events at the Probus Club I was in, leftover food went to those who wanted it (usually everyone) but for some reason they left the sandwiches so that’s how I know they stay fresh for days.
