Tanzghong method for fluffy bread.

I reduced the 40 gms of sugar to just 15. Lovely texture .

That looks great, I'm going to give it a go tomorrow, I love Tenina's soft buttermilk rolls and you cook a Roux , similar,  for them.   The Brioche looks good too.

Just be careful with the sugar. 40 gms of sugar is more than I would knowingly eat in  a month.

I played with this a few years ago: TangZhong Bread
I'd forgotten all about it!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I made MJ's bread quite a few times. Your loaf looks good enough to eat Gert. I love the french foodies work.
May all dairy items in your fridge be of questionable vintage.
