Welcome to the Forum MG. Hope you have your Thermomix by now and can join in the fun we all have. My daughter just bought her thermomix on Sat and is ecstatic. She recently had part of her bowel removed due to Crohns disease and is in the process of eliminating foods from her diet as well so she can avoid the dreaded long term drugs. You will get lots of info and help here. Great to have Townsville join us and as I live in Cairns we are nearly neighbours!

G'day to you. Nice to have some Yanks in the forum. I am originally from Syracuse NY and have lived in OZ for 45 years. I now live in Cairns in the tropical north of Australia. If you have any Q's about our recipes and wonder what we are talking about all you have to do is ask and you will get many wonderful replies from this community. Don't know what happened to your ice cream but I find it one of the easiest things to make. I use the whole egg and be sure to use cream with no gelatin. I haven't had a failure yet and I just throw whatever I have on hand like frozen raspberries or cocoa. Good luck and I look forward to seeing what you are cooking up.

I have a very expensive pasta machine made in Italy with an instruction book in 10 languages would you believe! Highlighted in Yellow is Never wash the machine with water or in the dishwasher.  Clean the machine after every use with a brush or wooden rod.  If necessary  put several drops of vaseline oil on the ends of the cutting rollers. Do not insert knives or cloths between rollers. During use clean the scrapers underneath the smooth rollers every so often with a piece of kitchen paper.

I have found that you need a lot of flour flying around to make pasta and at least four hands ar required to manage the stuff. Once you master it  make a truck load and put it in the freezer. Cleaning up the kitchen after is a b*****d!

Hi Niki. I live in even more beautiful Cairns!  Welcome to the forum. This is a great place to learn.

I have a 40 year old daughter with Crohns disease and I have been making Brazen's Gluten Free Rice bread for her. It makes a big loaf and toasts really well. I have not eaten it myself so you can be the judge of that. Go to www.brazen20au.blogspot.com/2009/01/gluten-free-rice-bread-gf-tmx This is the best recipe I have tried yet. I put it into a large loaf pan to rise then  I bake it at 200 degrees for about 1/2 hour more or less.  My daughter freezes half of it at a time. Probably I should divide it and make to but why should I do all the work!

Brazen is amazing and you cannot go wrong with any of her recipes.  I am about to make newbie Paul's  ice cream as we speak! It should be delicious.

Hi Paul from Cairns. I too live in Cairns and have had my Thermomix only a few months. After making bread by hand I am now happy to let the machine take over the kneading! Easy as. Let me know how you go with ice cream making. I haven't tried it yet. Be sure to look for cream going cheap to make your own butter for your bread. Though not a sweet eater I was given some citrus  fruit so made a cheap and delicious marmalade in only 30 minutes. Unbelievable. Have fun with your new toy.

Thank you all for the replies. I am wanting to make small jellies to go with a main or a desert. Something the size of a twenty cent piece of concentrated flavour.  Let say with a lamb dish with a herb and mint one or with fish a concentrated dill flavour. Maybe an orange and something to accompany a fig desert. In other words like quince paste but with the texture of a jelly just for fun.
