It's a recipe from a dear friend that I've wanted to share here. ;D Thanks for your help!

Hi Fernando, welcome to the forum.  I have just looked at the recipe you posted, how good does that look! Is it from one of your recipe books in Spain or a recipe you developed yourself?  I think we might give it a place of it’s own in the Starter section for easier access for our members. Looking forward to more of your recipes if this one is anything to go by.

Starters and Snacks / Shrimp and mango rolls with basil mayonnaise TM31/5

This starter or appetizer is so colorful, it’s prepared quickly with Thermomix.

The combination of shrimp with mango is spectacular with the touch of fresh basil.

It’s guaranteed to evoke dinnertime oohs and ahhs.

Ingredients:
Shrimp skewers

600gr fresh shrimps
250gr of water
1 mango
Some blueberries and toothpicks
Basil mayonnaise
1 Egg
250gr sunflower oil
50gr olive oil
Lime juice
Salt
Fresh basil leaves

Instructions:
Step 1
Put the water and shrimps in the varoma and set 15 ‘ / Varoma / speed 2.

Step 2
Remove from the varoma and let the shrimps cool, peel them and refrigerate for about 30 minutes. Clean the varoma.

Step 3
Peel the mango and wrap the shrimps, hold  them with a toothpick and a blueberry.

Basil mayonnaise
Step 1
Pour the oils in a jar.

Step 2
Combine the egg, lime juice, salt and basil in the glass, set 1,5′ / speed 4, when it finishes set again speed 4 – no time – then add the oil slowly until emulsifying (the basil should be well crushed) remove to a sauce boat and serve with the shrimps.

I have been a Thermomix fan for some years :),

I have registered in this forum to see Thermomix recipes.

 I am writing from Spain.
