Hi just a question about this recipe. Mine looked and tasted a lot grainier than the pic in the EDC and a lot lighter. Does anyone have any words of wisdom on this?

yeah mine too, and tasted nothing much like nutella. i figured next time i'd use dark chocolate to make it rather than milk (was too sweet too) but can't help on the graininess

Yes it does and the first thing the recipe needs to specify is to use DARK chocolate. If you use milk it is so sweet it is sickly, even my kids wouldn't eat it with milk chocolate  :-\

Hmm they are easy....something I noticed to Karen in these recipes they toast / roast the hazelnuts and then grind to a butter...could be something in that  ??? ??? ???

i just did the second one - i think you definitely need to grind the nuts alone first - i added the chocolate at the same time and it is still gritty. i did cook mine slightly though and that seems better than not. i also doubled the chocolate (it didn't use  alot)

Hi, I just made chocolate-hazelnut spread, and I liked it!
Grind 100 g toasted hazelnuts, 10 seconds speed 10.  let cool.  set aside.
Heat 50 g heavy cream, 90 g whole milk, 1 tbsp powdered milk, and 10 g canola oil 3 minutes temp 80 speed spoon
add 150 g semisweet chocolate chips (ghirardelli) and let stand 1 minute.
mix 1 minute speed 1
add the ground hazelnuts and mix 10 seconds speed 7
It will not be as thick as canadian nutella, more like european Nutella.  although not as sweet as either of them, and you will definetly taste the hazelnuts... thats why I liked it

My new consultant, Andrea, makes it with tahini instead of hazelnuts so the kids can take it to school.  That may be a smoother result?

What a fantastic idea....although be prepared for the questions from the diligent teachers that now have to monitor lunch boxes on top of everything else they have to do :o :o especially if your child happens to call it Nutella as well lol I can just see it now

LOL very clever JD and I may just use that I think so my DS can take it for a change. Would be ok at the moment as his teacher know about TMX and is interested, though scared of the price! She is amazed at all the things he takes to school and NEVER sees a packet in his lunch box  ;D

I think she would - basically think she just used an equivalent amount of the tahini instead of hazelnuts (maybe a little less?)

Karen it is too hard with him, he has so many things that trigger his eczema (more than anything) so it is easier not to  ;)

ahh fair enough. each weekend i ask R what he wants me to make, he tells me, i make it, he'll eat it when i've made it and then when i send it for recess i get told 'i don't like that one, please don't send it again' sigh

Yes I know that feeling, when the teens got to about 8 I think it was, I made them make their own lunches everyday (I have been called a horrible mother by many for many things lol) but it was purely for the fact that if they packed it they packed what they wanted and had no excuses no to eat it!! (oh and gave me a chance to hang a load of washing on the line before school and work lol)  ;)

Brazen and Faffa - Have you perfected this one?  Or still a work in progress?  It was one of the recipes that was pointed out to me at the demo as I had kids, but haven't tried it due to this post.

My consultant told me that apparently Tenina has tweaked this one to be better than the EDC.  One of the tweaks was using dark chocolate instead of milk, but I don't remember the rest.  Apparently the result was very similar to the real nutella.  I've e-mail my consultant to find out what the changes were.

OK, here's the response...

use roasted hazelnutes (or roast yourself - 15min in hot oven & rub the skins off with a tea towel while still hot)
use dark chocolate instead of milk
add 30g cocoa

As mentioned earlier, this is not mine, it is Tenina's tweaking of the recipe in the EDC. 

I haven't tried this yet, but intend to soon.

When I get around to remaking this after the other lot is finished this is what I would have done except for the cocoa after googling it earlier when we were talking about it. Thanks for finding out the tweak for us Molly  :)

I made this yestrday and next time I will change it a bit. 
I will halve the sugar and use dark chocolate with a higher cacoa percent.
I really liked how it was grainier than shop brought nutella.  I loved the nutty /grainy texture.

i made this the other day, and have only just read about it on the forum  :-))

i used dark cooking chocolate but didn't add the cocoa. i used 50g sugar and i didn't roast or skin the hazelnuts - they just went in as they were. i'm keeping it in the fridge (?) and it has gone quite firm but it is easy to spread and looks creamier on the bread than in the jar. i think it tastes like nutella but maybe that's because it's been quite a while since i've actually bought it from the shop!!

Thanks for all the advice here. I have made about 6 jars today for Christmas hampers and they have turned out quite well. I used dark chocolate and added cocoa. I milled the hazelnuts (roasted) separately. I have never bought Nutella but I think this is very nice. It didn't seem overly grainy, there are a few specks here and there but overall it is smooth.

Hrm, I made it with milk choc & the recommended amount of cocoa and my kids are saying it's too dark, it's definitely darker than Nutella. (I hate the stuff, so can't compare) I was going to try with less cocoa next time  ???

I am thinking of making this spread, but would like to know if anyone did more tweakings?

So far I think I'd try:

50g sugar
60g toasted hazelnuts
100g dark choc
70g butter
50g milk, add as needed
1 to 2 teaspoons cocoa.

Would this work?

By the way, how would you really sterilise the jars?

Hi Darls,
I was just thinking about this recipe this morning. I haven't tweaked it from the EDC yet.
To sterilise the jars I wash them in hot soapy water, rinse with hot water then sit them in the oven @ 100-120C for about 1/2-1 hour.  I also boil the lids at the same time on the stove top (or you could put them in a pan in the oven while you're doing the jars).

Has anyone tried the Hazelnut-chocolate spread from the 'My Way of Cooking' book?

There is no cocoa in this recipe and has a higher quantity of nuts, also it doesn't say to toast/roast them nor take the skins off.

I will try this today and let you know what the kiddie connoisseurs think  :D ;D ;)

The verdict on the spread was yummy, the kids like it. I did however make an alteration to it, instead of just grating hazelnuts, I roasted them and peeled them. I put the sugar aside and then put nuts in for grating for 20sec on speed 9. I then put it on speed 6 and waited for it to liquify. I saw this hint on another recipe (not to do with tmx lol), and thought this might make the difference to the texture. There is still a slight graininess, but am happy with the result. Although next time I will try with a condensed milk.

Thanks for the tips with blending until it liquefies.  Mark Best uses that idea to make praline into a soupy consistency.

Made another batch (from the EDC - I forgot about the MWOC recipe until I read this post again  :-))) over the weekend and blended the nuts until they liquefied ... SMOOTH Nutella  :D :D :D :D

here is the recipe for the French Nutella that my consultant gave us at a cooking class..it was smooth but didnt find it tasted like real nutella although they told us it was better to replace the dark chocolate with the Nestle Milk cooking dessert chocolate and that gets alot closer to the real nutella??? cant comment as i havent tried it myself..might do this week

50g hazelnuts or blanched almonds
150g dark chocolate
100g milk
50g caster sugar
80g butter

put all ingredients except for the butter in the thermomix bowl and mix 30 sec, speed 10
scrape down the sides with the spatula and mix 4 sec at speed 3
cook 2 mins, 60 degrees, speed 4
at the beep, add the butter cut up and mix 1 min at speed 7
poor the mixture into steriliesed jars and allow to cool.  keeps in fridge for a week.

dont know if it compares to the EDC recipe as i dont have any of the aussie books yet!

hihi JD...thanks for the friendly support..my parents even comment on my english slipping or speaking english like a frog lol (words all back to front)..oh well a downside i guess of living abroad and speaking another language..  :P

we have two nutella type recipes overhere for the THX..that was the only one i had tasted...will have to give it a go with the nestle cooking dessert milk chocolate and see how it turns out but definatley no lumps in it and after reading another thread it is probably just that we dont roast the nuts beforehand and just use them raw..maybe thats what makes the difference between bits and smooth??

I hope no one takes offense at my putting in my 2¢ seeing as I don't have a Thermomix yet but as I'm sure some of you know, Nutella is made with cocoa rather than chocolate. There's a perception among some here in the States that cocoa is somehow chocolate's less desirable poor relation but nothing could be further than the truth because they both have their own merits. Has anyone thought of using a natural (i.e., not Dutched, which I've always thought tastes anemic) cocoa of excellent quality, or even Hershey's just to start? As chocolate cools, it hardens and that might be what's partially contributing your graininess. Processing the nuts very well on their own and then blending in the other ingredients might give you the result you want. Also, the best hazelnuts are a Piemontese variety so once you get your techniques down, you might want to give them a try (budgets permitting).

This topic caught my eye because I'm planning to develop a recipe for gianduja nut milk in the near future. How can anyone resist a combination of chocolate and hazelnuts?  ;D

When I used raw nuts my Nutella was grainy, it was when I used the roasted nuts and processed them until it was liquefied that it became smooth. Only thing is with the roasted nuts the hazelnut flavour is a bit strong for some of the family  :-)) I use a combination of 50/50 dark and milk chocolate in my recipe  ;)

I love the choc hazelnut spread.  I did use dark choc and did roast and grind the hazlenuts separately.  It is delicious.  It does go firm when kept in the fridge, but lasts for ages and I love to spread it over big juicy strawberries and pop them in my mouth.  Yummy!!!!!!  I have found that this is one of the nicest things I have ever tasted.   :D

I've bought more nuts today to make more! Really yummy and great for us because it's dairy-free  ;D

I did the one as linked by Yamama :)

Accept, I used cashews, instead of hazlehuts (as we are a failsafe house), and it really does taste like nutella! Mine is grainy though, I did make it into a paste, then added the other ingredients, so will work on that next time, but yum!! The taste is great!

 It's dairy free and probably a bit healthier.  I made it yesterday and it's yummy, uses coconut butter and rice milk, dark choc and rapadura, and hazelnuts of course.  Worth a look if you want a slightly more wholesome version of nutella which I have never been a huge fan of (too sickly sweet).

Followed your alterations and YUMMY SMOOTH nutella - thanks!!!  I didn't peel the hazelnuts though and it still turned out smooth.

This was one of the first recipes I tried when I go tmy TM.  Followedthe EDC - well ok I doubled it *grin* and used half dark , half milk chocolate.  It ended up being a bit graininy - but tasted like ferrero roche in spread form.  We all loved it!

I just made this using tahini instead of nuts (just out of curiosity after seeing it recommended here on about page 2), and it's great!

 I used 70% chocolate and coconut sugar but otherwise all as in the EDC.

Very happy with the tahini variation although I am a big fan of nuts so will probably alternate as I go.

Might try half tahini, half nuts next time.
