I found a recipe in SFI for Chia & Coconut Pudding which I've had for breakfast.  Easy as, the night before soak 400g can lite coconut cream (I used coconut milk), 1/3 cup honey (80g) - a bit too sweet for me so I'll adjust that down next time & 1/3 cup chia seeds (65g).  Place in a container and stir well.  Cover and store in the fridge overnight. Top with some berries for a lovely breakfast, particularly on a hot day.

I don't know if I'm imagining it but I've had this for the past 2 mornings and I seem to have more energy than usual.  I've certainly achieved a lot more around the house  ;D

It can be used as a dessert but I like quick breakfasts and this suits the bill for 3-4 serves, not large but it is filling.

The picture is of 1 good serve Marina - all up I'll get 3 breakfasts out of that batch, could stretch it to 4 though.

Interesting dish Judy. I find coconut very sweet so think I would struggle with the combination of coconut and honey

There's too much honey in the recipe for me but it's a really nice combination Wonder.  I would even think of using Carnation coconut milk to cut the calories next time.  I just love how you can have breakfast ready in a flash with this one.

Obbie maybe you could help me, last few times I have poached eggs in the basket the whites just disintegrate and I am left with yolk only. I do the vinegar thing, the eggs are freshly laid, I follow EDC instructions

Judy - have you tried Quirky Jo's chia pudding? It's delicious and not too sweet. I make it without all the extra powders etc, and it's nicer made the night before so it thickens up for breakfast.
