Thanks for your response Isi. I know flours can vary in moisture content depending on where the wheat is grown.

Here is the Susan Loomis recipe I used.

I note the  flour is folded in. I wondered if perhaps using a shorter blend time after adding the flour and butter might give me a better result.

But they did look nice and I will try the recipe again.

I made these this week and was disappointed as they were quite heavy. I made the mixture the night before and left it in the fridge overnight. I have made Madeleines before using a Susan Loomis recipe from her book Tarte Tatin with a lighter result.

Raspberry Ice Cream:

6 firm bananas
150 grams raspberries:



Peel and chop Bananas into chunks, freeze overnight. Freeze Raspberries. Next day remove fruit from freezer and soften for 20 minutes. Place fruit into Thermomix and blend until smooth. I blended on speed 9 about (I think) 15 seconds.:

I've made these twice and both times the mixture is too wet. First time I followed recipe with home made buttermilk. Second time I used milk and reduced amount of liquid. Firstly is storebought buttermilk thicker or heavier than homemade? Secondly if not then is the recipe too heavy on liquid?

Sorry Cathy I misunderstood.  The top cross mixture is as written book. I'd reduce the amount of water when making them.

I made the recipe that is in the Thermomixer book. I just replaces the currants with sultanas.

I recently made the Hot Cross Buns recipe from the Thermomix book. I made a slight change and replaced the currants with extra sultanas. These were the most successful Hot Cross Buns I've ever made. One small complaint - the cross mixture for the top was a little runny and next time I would reduce the amount of water.

Thanks everyone. I don't add the oil, but I do store the butter in small pots which hold just enough for the day. Each morning I remove from the fridge the amount of butter I need for that day.
