Title: Rum and Raisin Fudge

Hi - I found this recipe on taste.com.au (link below) and then more or less used the TM Choc Salami recipe to convert this to TM, as below. Made today and just sampled it - incredibly rich but yummy!  :)


Rum & raisin chocolate fudge squares

Ingredients
• 60ml (1/4 cup) rum
• 95g (1/2 cup) raisins
• 400g dark chocolate
• 1 x 395g can sweetened condensed milk
• 50g unsalted butter

Method

Line a 20cm (base measurement) square cake pan with non-stick baking paper. Combine the rum and raisins in a small bowl. Set aside for 1 hour to macerate.

Add butter to TM bowl. Melt for 2 mins, 50 degrees, speed 2

Add chocolate to TM – 3 mins, 50 degrees, speed 2

Add condensed milk to TM – 6 mins, 50 degrees, speed 2

Stir in the raisin mixture (I did this in by hand in the TM bowl).

Spoon into the lined pan and use the back of a spoon to smooth the surface. Set aside to cool. Place in the fridge overnight to set. Cut into squares.

Note: suggest using 1.5 times recipe (fits in TM) as this fits nicely in a small slice tin.

Some lucky people will get these for Christmas!

Sounds lovely Jo.  Would be very interested to hear if it sets firm for you overnight.  I tried making some on Saturday(different recipe) but it was still soft today.  Won't go to waste but was sorry it didn't set so I could cut into squares.   :)

Rum and raisin, one of my favourite flavours together. Hope it works out for you.

JulieO - I have already lifted it out to cut a corner off to taste. Pretty much set now, but will be better overnight.

My DH's only complaint is that it is so rich he won't be able to eat lots at once!! I had to remind him it is mostly for gifts. Rum and raisin is his favourite combo too.

Good work jojo - sounds rich.  With all the chocolate in there and sweetened condensed milk it would be hard not to have it set.

Thanks Goldfish for the bump.

As per my other thread, it seems very rich, especially with 1.5x , making 600g of dark chocolate.

I'll probably give it a go, but I think I'd like to try with sugar vs chocolate.
