Meyer Lemon Sauce

Perhaps this should be called RAW Lemon Sauce!
Ingredients
2 large Meyer Lemons, 1/4 and seeds removed.,
2 dessert spoons of simple syrup. ( 1/2 cup each sugar and water boiled for 3 minutes)

Method
Place lemons and sugar syrup into TMX and mix, speed 10 for 1 minute.
Scrape down and mix again speed 7 for 1 minute.

Notes
Will keep for 2 days.
I am serving this with Veroma steamed Salmon , grilled Semolina wedges and salad from the garden.
Could be thinned with a little olive oil and a bit of honey , use as a salad dressing.

This was adaped to TMX from a recipe in Epicurious .

It never ceases to amaze me how something like this thickens just by beating the death out of it.  Good one Chookie.

Im going to get so e salmon this week and do this. It sounds delicious.
May all dairy items in your fridge be of questionable vintage.

I guess ordinary lemons would work too Chookie, what's the difference between them and Meyer? I don't think Foodland sell Meyer lemons.

If you use ordinary lemons you have to blanch the rind. 
Meyer lemon are not as tart as ordinary lemons.
