Dark Chocolate and Pumpkin Loaf

Dark Chocolate and Pumpkin Loaf
Makes 10-12 slices
Ingredients
1˝cups caster sugar
250g cooked pumpkin
˝ cup vegetable oil
1/3 cup water
1 3/4 cups plain flour
2 eggs
1 teaspoon cinnamon
˝ teaspoon nutmeg
1 teaspoon baking powder
1/4 teaspoon salt
180g good cooking chocolate. I used Lindt 70% roughly chopped.
˝ cup walnuts, chopped roughly
Preparation
Preheat oven to 1600C
Grease and  line a medium loaf tin.
Place sugar, pumpkin, oil, water and eggs. Speed 3-4 until smooth.
Add flour, cinnamon, nutmeg, baking powder and salt.  :: until incorporated.
I added the chocolate and walnuts by hand. I just stirred them in with a spatula.
Place into the prepared loaf tin.
Bake for approximately 1 hour to 1 hour 15 minutes.
Leave 15 minutes before turning out.
This can be toasted but I like it as it is.

Next time I make this I think I will reduce the amount of chocolate s little. I slice this, wrap it in glad wrap and freeze. It only takes a short time to defrost.  I was given the recipe when a new Jamaica Blue coffee shop opened near me and they were serving this. They don't seem to serve it any more.
May all dairy items in your fridge be of questionable vintage.

Just remembered to put the photo in. I don't know CC. I think Lindt may have been sponsoring them at the beginning as you were always given a small Lindt chocolate as well.

Looks delicious Cookie. I love the old fashioned pumpkin fruit cake but I bet this is equally as good. They probably gave that recipe to so many people that no-one bought it anymore - why would you when you could make it yourself  :D
