Rara's Triple Choc Muffin Tops - Makes 12
160g sr flour
150g plain flour
180g milk
100g raw sugar
2 eggs
70g light olive oil
1/2 tsp baking powder
25g cocoa
125g cadbury milk choc bits
125g cadbury dark choc bits
Pre heat oven 180c
Grease muffin top pan (purchased at woollies)
Place all ingredients except choc bits in TM and mix for 40 sec on speed 4-5.
Add choc bits and mix for 15 sec on speed 1 using spatula to incorporate choc bits.
Spoon into muffin top pan and cook for 10-12 min or until cooked. Do not over cook!
*You could use a muffin tin but will need to cook for around 20 min*
BE AWARE THESE ARE ADDICTIVE
My 4 yr niece can't have dairy so I have also been able to successfully convert this without using dairy and refined sugar. I have found dairy free choc chips, used cacoa and agave.
Muffins can be frozen.
Would work using patty tins too. Just cook them for less time.

cookie1 - the taste is wonderful. The mixture seems very stiff, is this correct? I did get distracted mid recipe. They are like a cakey/biscuit? As I said they taste lovely anyway, I was just a bit concerned as I thought I may have left the milk out. (I don't think so though). Mine look exactly the same as your photo.
Rara - Yes cookie the mixture is quite stiff and it tastes more like a cake.
Chookie - These are wonderful, thanks Rara. I didn't have the correct tin so cooked them in what I had. Made 45 little ones for the GC lunches. One of our favourites.
maddy - whipped some up tonight for a lunchbox treat for the kids. Only had half the choc chip amount, so subbed the rest with chopped up maltesers. Yum!
JD - They are excellent but I still find them too big for me - I'm happy with half of one as I am sure most of my visitors would be too. Thanks for the recipe Rara.
andiesenji -To get a thinner, flatter or muffin top of even thickness, use the back of a spoon, dipped in water, and swirl the batter out from the center so it is higher near the edges and there is a bit of a dip in the center. The center always rises more and this will allow a more even rise. This doesn't work if the batter is very thin but for most muffin or cupcake batters, it works quite well.

Johnro - These were a big hit yesterday when made - 2nd batch in oven now with white choc chips, so they are not quite rara's triple choc muffin tops - thanks Rara for again satisfying the choc addict in me!!!!!
Hally - so easy and yum. Next time might reduce chocolate chips and add macadamia nuts. A very easy and tasty recipe.
Dede - I just realized I have yet to leave a comment on these as I have made them several times now and they are always a hit with the kids. I am sure I will be making these for many years to come.
VieveMS - Wow, talk about super easy and quick. I used my new funny face pans. Next time I'd do a better job of mixing in the choc chips as my first batch was definitely more chocolatey than my last batch. Thanks for the recipe Rara.

Hi Judy, this recipe I posted on the taste forum a year ago.
They are so easy to make and are requested by family members all the time.
My 4yr niece can't have dairy so I have also been able to successfully convert this without using dairy and refined sugar. I have found dairy free choc chips, used cacoa and agave.
Muffins can be frozen.

They look divine. My family informed me yesterday they prefer muffin tops to muffins. DH likes the slightly crusty top and bottom and the fact that there is less of it.

have pulled my hand away every time I have reached to buy these tins - would you say they are not really muffins but more like cakey biscuits? (without the crunch) that sounds like a pathetic description, but I am trying not to buy another tin - cleaned out all my cupboards of excess and they seem to have crept back up again.

Hi CP, the muffin top is more like a flat cake, less doughy than a muffin. Have I confused you yet :D
I have a kitchen hoarding/ need every new gadget syndrome (problem) so for me the muffin top pan was a necessity ;D
In saying that my kids prefer muffin tops than actual muffins.

If I can find those tins anywhere down at DD's shopping centre tomorrow, she will come home to a batch of these. Decision made ;)
Yes maddy, handy that they are flat. Staying in shape has gone right out the back door - these look so irresistible.

I adore cherry ripes but try to be strong and not buy them. These would be my downfall. I loved the milk chocolate cherry ripes that were round for a while. Mmmmm
DD brought back 12 macarons from Lindt in Melbourne last night. Lucky she counted them before she went to work; they are wonderful. All different flavours.

Either split the thicker ones or take two of the thinner ones and "fill" them with Italian meringue into which you have stirred chopped cherries and pecans.

OK, I managed to find the tins at Woolworths Glenelg - neither Coles nor the specialty kitchenware shop had them. Back home to DD's place to whip her up a batch and bought 4 home for ourselves. They are excellent but I still find them too big for me - I'm happy with half of one as I am sure most of my visitors would be too. Thanks for the recipe Rara - I look forward to more from you.

I do the same things with round cake tins, although I also use the "bake-even strips" (http://www.amazon.com/Magic-Cake-Even-Strips-Small/dp/B00024WO6M) made for this purpose. Before these things were available I used the method I described above.
That is what we did in my mom's bakery when I worked there back in the mid-'50s. Otherwise we had to cut off the domed top to have an even surface. Turning the cake upside down still meant there was a bit of a dome but starting with the batter lower in the center helped to have an even rise.

As yiu can see they are smaller than muffin tops, but they are so rich the size suits me.
Ds just scoffed 1, told him no more, he has the cross country race tomorrow and i would like him to get passed the start line, if he eats too many he might wobble over at the start. ;D

I like them with white chocoate melts too.

i used to make the brandy snap dessert in it. why did they stop making the brandy snap biscuits :(

Just wanted to pop in and say a BIG thank you to Rara for putting me onto these evil muffin top tins.
I am currently on a day off, enjoying a cup of tea with a warm banana and choc chip muffin top muffin ( or two!) and was reflecting on how I first heard about the muffin top tin. It was on the Taste TM thread a few years ago, and boy those triple choc muffins are so decadent.
So 'bump' to this thread, and thanks again Rara.
