Judy,

a friend of mine on another forum has been drinking nettle tea, made her own out of nettles on her farm. I think, but don't quote me, that she said it was a great source of iron. They were discussing getting more iron in the diet.

I used half the sugar and it was really nice.

Also use a really big mug! It overflows if you use one too small, and then it's not a pretty looking thing. I used the tall tupperware thermomug. Prob shouldn't cook in it, but we don't use it, so its handy for that :D

I start with cold tap water. If I make a second batch for the kids who ate the first batch, I tip out the hot water and start again with cold.

I quite liked it when I made it. Nice for a quick dessert late at night when you feel like something yummy. Its delicious hot with cold icecream.

I tried this out this arvo. Yummmmmmy! I made the full quantity because I'm going to refridgerate it for ice coffee. I used less milk (about 650g) and made up the rest with water because I couldn't be bothered getting a new bottle of milk out. Worked beautifully.

I accidently made a 3 course dinner tonight. I had the inlaws visiting for dinner.

After lunch I made pumpkin soup and mushroom soup (both recipes in the TMX everyday cookbook).

We had Roast Pork, roast potato and pumpkin and gravy (cooked in the electric frypan)

I whipped up a coconut custard pie (which is really impossible pie) in the TMX, cooked in the oven

Made apple sauce in the TMX while the soup heated in the microwave

Steamed the carrots, beans and zuchini while we ate the soup.

It was soooo easy. And not much washing up!! I washed up soupbowls etc while everyone served themselves main course. The kids washed up the main course dishes. The kids were so excited to be having a 3 course meal. You'd think they'd never had one before... they probably haven't LOL

You'll get the hang of it! I don't convert my favourite recipes in a way that I can write down to share, but by looking in the recipe book and seeing how they suggest you do things (like cream butter/sugar, what temp to cook meat etc), I then apply them to whatever I'm aiming to do. I find some of the recipes in the cookbook don't need to be whizzed the length of time it says. Try it less, check it, whizz it again.

I have really enjoyed trying out recipes from this forum. There's such a huge variety of recipes to try out and the more you try, the more you learn. Less is always best.

When I first started using my TMX, I went thru the recipe book and wrote a list of what I wanted to cook and made a shopping list of what I didn't have. It really helped to have the stuff on hand.

Chit Chat / Crazy couple of weeks
« on: April 20, 2009, 07:40:35 am »
I don't think I've cooked a meal for over a week!! Oh, I did bacon and eggs on Thurs morning while we were camping, but he had dinner out while camping. I cooked on Mon night last week.

The week before easter I aggravated an old shoulder injury while painting a room in our house. That put me behind everything I had to do, since I was doing most stuff one handed. Had a busy easter weekend with dh working. The older 3 kids went north to central QLD with my parents for a few days, then my dh and youngest and I went up to camp with the kids for 5 days.

On the 2nd day of camping, found out that dh's nana died in NZ. His mum was unable to go to the funeral and dh really wanted to go, so Wed saw me finding tix on the internet and Thurs we packed up and drove home to Brisbane (9 hours). Fri arvo we left the kids with my brother and sil and dh and I flew to Auckland. We had a great time with family over there. Nana wa 91, so it was a celebration of her life. We came home Sun night. I don't know if I've ever travelled so much in 1 week. 18 hours of driving, flights to NZ and back, driving to the town where nana lived and back.

Looking forward to the kids going back to school tomorrow, except I have playgroup, so I need to be organised for that. I want to stay home and organise my life, get back into routine etc.

Off to peruse some recipes to make something quick and easy for dinner tonight. I feel like macaroni cheese, but none of the kids like it!!

I honestly can't remember. It might have been bread or custard.

I totally agree. I hated cooking boiled eggs before TMX. Now I'm quite happy to cook them up for the kids on a Sunday night for dinner.

Suggestions and Complaints / Re: Read the recipe!!!!
« on: March 29, 2009, 11:10:16 am »
Especially when you have heaps of ingredients in the  *: and then you notice in the recipe you're trying to convert that it says grate the chocolate or parmesan. Something you should have done first when you're using the TMX. :P

I hate that too!! That's when I wish I had a second bowl. I'm a shocker for reading the recipe too. I just skim thru it and think I know what to do. Nearly all the time it works out fine though.

Cooking the mince in the frypan coz I'm feeding about 15 tonight.

Big frypan - sounds like Warren's kind of party - you are generous soles.

I am considering making that espresso coffee thing in the drinks section. Can't remember the name off hand. Might make myself one tomorrow when no one else is home :D

I think a couple of G & T's may be needed - if you survive.

This happens every Wed night when we have homegroup. I had to make up a menu plan for the whole term and tell the other two families what to bring. We feed 6 kids first (8 if one family brings theirs) and then 5-7 adults after the kids finish. Last night, everyone was here because it was someone's birthday. Its organised chaos.....
