Coconut Rice

Name of Recipe:Coconut Rice
Number of People:6 serves
Ingredients:
1 teaspn vanilla paste (or 1 vanilla pod)
225mls coconut milk
550mls skim milk
300mls thickened cream
50g castor sugar
1 large star anise
4 tblspns toasted coconut (I did this in a heavy based pan first - only took seconds once the pan was hot)
140g short grain dessert rice, washed (washed weight was 160g)
1/2 teaspoon butter

Preparation:
 Place the vanilla paste (or split the vanilla pod (if using) in half lengthways, scrape out the seeds and place both parts into the TM bowl) into bowl along with the coconut milk, skim milk, cream, sugar, star anise and 2 tblspns of the toasted coconut.
Heat the milk mixture for 15 minutes 90oC on reverse, speed 1.
Remove the star anise and the vanilla pod (if using).
Add the rinsed rice and cook for 30 mins on 90oC, speed 1, Reverse.  If not moving enough use speed 2.
The mixture will be a little thin at this time but add the butter and either pour the mixture into the thermosaver or leave it in the bowl if you don't plan to use it for a while.
Let sit for 20-30 minutes and it will have thickened enough to serve, sprinkled with some of the extra toasted coconut.

Judy,  this looks yummy.  Is there no photo because you and DH ate it all in one go ? :-)) :-)) :-))

No photo Chookie because I had to eat and run after lunch.  We had some hot for lunch then by the time I got home and it had cooled and thickened a lot more, I decorated it as I would do for a summer dessert.  Plenty there still.
This should now be called Coconut Rice Dessert not rice pudding.
