Fig, Apple and Walnut Paste
Delicious with soft cheeses and crackers
Converted from CSR Sugar website
Makes 24 x 1\3 cup muffin sized pastes
Ingredients
3 large granny smith apples, peeled (probably no difference if you dont peel)
Juice of one lemon
3 cups of Jam setting sugar (600 g but i would reduce next time )
1 tsp cinnamon
1 1/4 cups dried figs ( about 200 g)
125 g walnuts toasted
Method
Chop the dried figs 6-8 secs Sp6 set aside
Chop the toasted walnuts 2 secs Sp4 set aside separately
Peel and quarter apple blend 10 secs Sp 8 scrape down and repeat until you have smooth paste
Add to the apple in TMx, the lemon juice, sugar, cinnamon and figs
Cook 90 degrees, 35 minutes Sp 2
Stir then cook another 2 mins on Varoma temp Sp 2
Stir thru walnuts 5 secs Reverse Sp2. ( I actually put my walnuts in with figs and cooked as I misread)
Pour into muffin tins that are lined with plastic wrap or foil muffin cases.
Leave to set overnight. turn out and serve with cheese and crackers.

I'm so excited for you too GHM, it is a great moment when we post our first conversion - it looks great too, well done.

-
GHM, congratulations . Like the conversion, recipe and photo.
-
This is something I will definitely try. Like Uni asked though, do I need to core the apple ?
-
This is on the to-do list, GHM - thank you!

like jam maybe Jb :-\
-
Hi I didn't core my apples and next time i wont peel them either. should keep the same length of jam if you store in sterilised jars. the little patties turned out of the muffin cases look great on the cheese plate.
-
Well done GHM.
Looks delicious.
I haven't converted yet :(
-
Thanks GHM, I've added this to my christmas hamper ideas file. Sounds delicious.
-
GHM I bought a roll of this in the Adelaide Hills and I gutsed the whole lot myself. It was amazing. I was going to give it a go when I got home and you have done it for me. Thanks. 😍
-
This one probably not the texture of the ones you leave to set into log and cut this one more like jam.. But I do have a recipe for the log fig paste so I will post that too!
-
Going to make this tomorrow GHM so how much sugar would you suggest as you said you would use less next time?
-
Thought I might make this soon - love anything with crackers and cheese. Also would be great in Christmas gifts. Can anyone tell me if I could just use normal sugar - I know I had trouble finding jam sugar last time I needed it. Also interested in amount of sugar required.

Hi MF
I would just put in one bag of the jam setting sugar which is 500 g. Hope you like it.

]Hi Deniser,
I had to go to a couple of shops until I could get the jam setting sugar, you can also use normal sugar and add some jam setta, I know there are others who make jam with normal sugar only but I am not a very experienced cook at all.
The recipe stated 600 g of sugar but I would reduce next time.

Thanks GHM. Looking forward to it as it sounds delish. Need to go to Ikea to buy some jars :)
-
Hi MF are you in Perth? There is a great place in canning vale that does lovely jars all shapes and sizes work out cheap especially I if you share a carton with someone
-
GHM do you mean silver lock or plasdenes?
-
Hi yeah I get my jars from Silverlock. Love the hexagonal ones with gold lids.
-
Yes GHM I am in Perth NOR. Is Silverlock a shop? Sorry but haven't heard of it
-
Congrats on the conversion ghm... Something to try 😊

Looks great GF they would be perfect :)
I like the ones GHM likes :)

After such success with both the quince and apple & pear paste I'm eager to try different combinations. Do you think i could use fresh figs and cook for longer to give a much firmer texture? While I like the idea of the walnuts I'm not sure they would work in a firmer paste.
-
Hi there, we have a fig tree so will be using fresh figs for this recipe. How many would I use instead of dry? Thanks
-
I think by using fresh figs there would be a lot more liquid in the mix. Perhaps try a little bit without the apple.
Hopefully someone will have a better suggestion for you.
-
MY 1ST thought was chop them up and strain overnight with a weight on top of the figs, and use the same amount
-
That sounds like a good idea Uni.
-
I made this yesterday and it turned out beautifully. It made 14 muffin size amounts which is a great size for a cheese platter. Thankyou GHM - great recipe!!!
