Anzac biscuits with macadamia nuts
Ingredients:
120g butter
2 Tbsp Golden Syrup [100g]
100g rolled oats
180g plain flour
125g sugar- brown
50g desiccated coconut
1 tsp. bicarbonate of soda
3 Tbsp of water
150g macadamias chopped
Method:
Preheat oven to 160oC (fan forced) and prepare baking tray.
Place butter and golden syrup in TM bowl and heat for 2 minutes at 60oC on speed 2.
Add remaining ingredients and mix for 10 seconds on speed 2.
Place one dessertspoon of mixture onto trays and flatten with wet fingers.
Bake for 15 minutes or until golden brown
Remove from oven and cool on tray for 5 minutes, then transfer to wire rack to cool.
Tip:
I use a 4 cm ice cream scoop and this makes 34 biscuits about 8 cm in diameter.
I usually chop the nuts by hand for a better texture. DH likes his a bit soft and chewy, I like mine crunchy. So I cook mine a bit more.

cookie - they were lovely. The only thing I did was chop the macadamias before I made the biscuits. Lovely recipe.
courton - Made the biscuits today but forgot to chop the macadamia nuts upfront..lol! Left it out of the recipe this time. The success of the recipe was revealed when I left the room for 15 mins and DD had consumed 4 of these whilst they were cooling! 5 stars in our household.

Thermomixer - I made some today without macadamias - because macadamias can cause problems in dogs and our dogs ALWAYS end up eating some of the bikkies.

I made these yesterday and they were lovely. The only thing I did was chop the macadamias before I made the biscuits.

Hi, I printed out your recipe to make it and realised that I didn't know if you used 180 gm plain flour or 80 gm plain flour... I will wait until your reply before venturing forth in the kitchen to bake these beauties. Thks

that would be 180g - about a cup

Yes, that is correct Thermomixer, 180g plain flour. Also a good idea to chop up the macs.

Isi, it means Australia & New Zealand Army Corps - a contingent of men who combined to fight together in World War 1.

Not necessarily a bad mistake to make. At least they can go to nut-free schools!

I adapted this recipe for a friend who found the one in the EDC book, too sweet. Her 11 year old son made them, and ate them!! It was the first recipe that I had converted, I'm so glad that you like them. 8) 8)

Megan, I love the white chunks of macadamias, Thermomix site has a recipe where you use the biscuit as a base for small lime tarts. My DD uses them as a base for small cheesecake tarts.
