Turkish Delight Cordial

This recipe is a Thank you to all the kind people who offered support when we recently went through a very rough patch.   Inspiration for this cordial was from the September issue of Country Living, ( English ). It is adapted from a recipe by Sarah Raven. 

1 k of white sugar
500 Mls of water
A handful of Rose geranium leaves,rinsed, ( if not available add an extra dessertspoon of Rose Water.)
Juice of 3 or 4 lemons.
Grated zest of 2 lemons
15 g of citric acid.
4 dessert spoons of Rose Water.

Mill sugar in batches,  to form caster sugar. 
Add water and geranium leaves, cook 10 mins, 90, speed I reverse.
Allow to cool.
Remove geranium leaves.
Add lemon juice, zest, Citric Acid, and Rose water.  Tasting after second spoon full of Rose water,  to get the balance correct. Add rest as required.
Bottle in sterile bottles.

Makes 1 liter.
Serve over ice,  with plain or mineral water.
Can be made without the Citric Acid,  but will not last as long. 
Keep in fridge when opened.

Cookie,  after years of not being able to grow lemons,  we have heaps,  so always looking for ways to use them.  Think I will make some Lemon and Carrot  Marmalade next.
