Title: Nectarine and Raspberry Jam
Post by: achookwoman on December 23, 2009, 03:18:27 am
Picked the first of the Raspberries today and had some nectarines that were too soft to eat so ........

380g  nectarines with stones removed
200 g raspberries
400 sugar
1 dessertspoon of lemon juice
2 dessertspoons of 'jamsetta'

Zap nectarines in T.M
Add raspberries and sugar and lemon juice
Cook 30 mins,100 speed 2
Add 'jamsetta' if a firm jam is desired.

This. made 3 small/medium Jars, excellent flavor.

Thanks Chookie - are the nectarines from your tree?  MrsT bought some 2 weeks ago from the greengrocer and they were still hard and tasteless after a week so I stewed them

No, the birds eat most of what grows in the orchard,    we only manage to save the berries as they are easy to cover.

I find stone fruit so disappointing Thermomixer - bring back the 'good old days' when people had fruit trees in their back yards - now, that was what you call fruit.  I bought some apricots the other day and they only tasted like apricots when they were ready to throw away - you certainly couldn't present them to visitors in that state but the taste was good by then.

JD perfect for jam ?
Yes Chookie they would have been but I only bought a few and paid top price for them.  For jam I will be looking for bags of overripe ones going out cheap.

Me too, and this often happens between Xmas and New year.    And this year we will be in Tassie watching the boats,  (well DH will)  .I will be attending Taste of Tasmania.   The terrific thing about the T.M and jam making , is no hot kitchen.

Safe sailing Chookie  ;) ;)

JD - we had lunch with some Nepalese people on Sunday and they said mangoes and guavas in Australia have no flavour - I told them that they need to go to Queensland and find trees laden with them rotting underneath.  Then they can smell the wonderful aroma like in Asia.

It is like avocados - the first half dozen I had when young just made me wonder what the fuss was about - they were like greasy bullets.  Now, once I tried some fresh ripe ones - that is different

My biggest frustration is with peaches or nectarines which, by the time they are ripe enough to eat, are all woody.  It doesn't happen all the time but enough to make me  >:( >:( as they just get thrown in the compost bin.

I have fruit trees in the front yard.
lemons, apples, peaches, plums, 2 mangos, 2 lychees, 2 avacardos, lemonade, bannana's,mulberrys,  all wonderfully irrigated by my husband.
Full of fruit too.

Lucky you. Do you have any problems with fruit fly?

Made this today, and it is the most gorgeous jam!  We have a glut of raspberries from our garden, and some nectarines from the farmers market, so we gave it a try as a possible treat to include with christmas presents - beautiful!  I only used 1 dessertspoon of the Jamsetta, and after adding it, cooked for another 10 mins at 100 degrees, and it set just as I like it.  Thanks so much chookie for another winner!

Hello all! Just wanted to say Hi and report that we have just made a double batch of this recipe and the results are awesome. Just tested some on ice-cream for dessert  ;D
Doubled it all up it is 'just' fit in the bowl. Had a bit of over flow and splattering but once I turned the basket over with the base up (hubbies bright idea) it was all good. Second batch is now almost done now too  :)
Looking forward to sampling the results on pancakes for breakfast in the morning.

Love this recipe chookie. It works perfectly every time. I'm not much of a jam maker but I have made three batches this week using plums instead of nectarines and frozen raspberries. I don't like jamsetta and left it out, using two dessert spoons of lemon juice instead. I cook for 10minutes longer as raspberries were frozen. Perfect and thank you.

Kimmyh, looks good. I can see you are on a jam roll!!! Home made jam is so much nicer than the bought stuff.

Followed Kimmys example and used this recipe to make plum and raspberry jam.  I increased both the lemon juice and the jamsetta to 1 tablespoon, and ended up with a really lovely tasting jam (not too sweet) with just the right texture that I like.

Will be making this again for sure.  Thanks again chookie for a super-versatile recipe!

Today I am collecting together all the bits of berry fruit sitting in fridge and making a version of this.  Should be OK.
