I've made this quite a few times lately as it's easy and delicious. You can vary the veges with what's in your garden or in season in the shops.
I usually go all out and buy asparagus and baby squash because the salmon is expensive and deserves to have extra special sides!

I have a question about the lemon Megan.

Do you pulverise it in the thermomix or do you just add the rind while making the sauce for it to infuse into it.

Finally made this today, it was absolutely delicious!

For the veg I used, broccolini, baby squash and corn on the cob.  I only used 1 lemon instead of 2 as I used home made lemon pepper seasoning and that is quite lemony so only used a sprinkle of both the juice and zest over the salmon before cooking as it had a fair bit of the seasoning already on there.  I used the rest in the sauce.

I don't usually add cream to potatoes, but it really makes a difference, was lovely.

Will be making this again very soon because we both said it was so good.

Had this at a friend's place after I gave her the recipe, (hope that is ok MJ) as she doesn't ever go onto the computer further than emails. Absolutely delicious.  :D :D :D

I bought 2 pieces of salmon today for this recipe.  I have frozen it until such time but I've written the topic number on the packet so that I won't forget which recipe to use.

Had this tonight and it would be a really nice meal to serve up to visitors. Thanks MJ, it was lovely.

 I have a tiny piece of fish & some of the lemon sauce left so will make creamy prawn risotto in the next day or so and add it to that.

I have finally bought some salmon to make this dish. I'll be trying it on the weekend! I think my DH will be impressed!
