I just converted this recipe

Ingredients
500g mango (approx 2 fresh mangoes)
500g cream cheese
1/2 cup sugar
1/4 cup water
1 tbs gelatine
300ml cream
1/2 pack arrowroot biscuits
75g butter, melted

For the topping
2 mangoes
4 tbs caster sugar
2 tsp gelatine
100g boiled water

Method
Place biscuits in TM bowl and process 10 sec/speed 6
Add melted butter and mix 10 sec/ speed 6
Press into a greased springform tin and place in freezer while you make the filling.
Chop mangos up and place in TM bowl along with cream cheese and sugar.
Mix for approx 50 sec/ speed 7 with the aid of the spatula until smooth.
Mix gelatine with water and microwave for 30 seconds.
Add cream to cream cheese mix in TM bowl and mix 30 sec/ speed 7
Add gelatine mixture and mix a further 20 sec/ speed 7

Pour mixture onto biscuits and place in freezer for 30 mins.

To make topping
Place mangos in TM bowl and blend 20 sec/speed 5 until puréed
Add sugar, water and gelatine and combine 30 sec/ speed 6

Pour over cream cheese mix and place in fridge for a further 2 hrs

kyton - Lovely - husband and in laws both loved it. I used Granita biscuits and used a whole 250gm packet as well as doubled the butter. Didn't look anywhere enough crumb for my springform tin.

MF - Had this yesterday as one of my Christmas desserts. Everyone loved it and said I should have made 2. It was absolutely delicious. Topping started to melt but it was extremely hot here yesterday. Maybe a little more gelatine needed as my mangoes were very big and very juicy. Wish there was leftovers'

dhitri - My cheesecake was delish but crumbled (or should I say: melted?). I think it might have been the agar I used to substitute gelatine. I just read today that agar has a much higher melting point than gelatine. Might have to experiment a little with dissolving the agar in a sauce pan, then mix with warm as opposed to cold mango cheesecake puree before adding cream and pouring into tin...

Cakes / Iced apple cakes
« on: September 10, 2012, 05:16:47 am »
I made these last night from a recipe off taste. I converted it to thermomix. Hope it's ok to post it?

Iced apple cakes
Makes 8

Filling: 4 apples, peeled and cut into 8's
           2 tsp cinnamon sugar
           1/2 MC of water

Cake: 1c plain flour
           1 c SR flour
           100g butter
           1/2 cup caster sugar
           1 egg
           2 tbs water

Icing: 2 cups icing sugar
          Water

For filling:
Place apples, cinnamon sugar and water into  *: cook 90 deg sp 2 for 8 mins.
Place in a bowl to cool.
For cake:
Place flours and butter into  *: , mix on sp 4 for 20 seconds.
Add sugar and mix sp 4 for 5 seconds.
Add eggs and water, mix sp 4 for 20 sec until combined.
Place on  *: and  :: approx 30 sec to form a dough.

pre heat oven to 180 deg.
Place dough on thermomat and roll out to approx 5mm thick. Using a cutter or glass cut 8 rounds out of dough and place on a baking tray lined with paper. Place some apple filling in the centre of the round. Using a slightly bigger cutter, cut 8 more rounds out of the dough and place on top of apple to form a dome shape.
Bake in oven for approx 25 mins.
When cold, ice and store in the fridge

KerrynN -  I have these in the oven now but I have way too much apple. Not sure what I have done wrong? The diameter of my cakes are approx 7cm. On the plus side there is enough apple left to make a family sized pie with some ready made puff pastry.
I ate one for lunch today it was fantastic! Just as I remember them being from when i was a kid. I wish I had just made extra cake dough so I had more. I can't imagine the puff pastry apple pie being nearly as good. I do now see the value of having commercial icing sugar in the pantry though. My icing, made with home ground icing sugar from raw sugar wasn't a nice color.

Zada - Depends how big your apples are? I should have written smaller apples, mine were quite small...sorry! Recipe has been amended.

Bread / Adding grains to bread dough
« on: August 31, 2012, 05:26:15 am »
I'm making the easy everyday white bread, if I add a multigrain mix in, do I put less flour in or more water? Or do I just use the same amount and add my grain in?
Thanks
