Creamy Sweet Potato Soup

Name of Recipe: Creamy Sweet Potato Soup
Number of People: 4 - 6 serves
Ingredients:
120g onion, peeled and cut into quarters
1 tblspn olive oil
500g sweet potato, peeled and chopped roughly
400g potato, peeled and chopped roughly
500ml water
1 tblspn vegie stock concentrate
2 tsp Tenina's concentrated garlic paste (from FFS) - use 2 cloves of garlic if you don't have any paste

65g cream
30g smooth peanut butter
S & P to taste

Preparation:
Place the onion into the TM bowl and chop 2 sec/speed 5.
Add the oil and saute 5 mins/varoma temp/speed 1 (thanks Tenina).
Add the rest of the ingredients except the cream, peanut butter and S & P and cook for 25 mins/100o/speed 1.
Add the cream and peanut butter.
Blend for 20 seconds working your way up from speed 1 to speed 9.
Taste & add S & P.

Tips/Hints:

If you don't have the recipe for the garlic paste, add 2 cloves of garlic with the onion in the first step.
This is quite a thick soup which thickens even more once it goes cold so just thin it down with extra water when you reheat it.

Nik2WIN -  I had some sweet potatoes that were getting close to their use by date and found this.  Absolutely delicious!  The peanut butter just lifts it up.

We've just been given a heap of sweet potato so will have to make this. I've just noticed the peanut butter interesting.
May all dairy items in your fridge be of questionable vintage.

I just made this this morning.  I had some sweet potatoes that were getting close to their use by date and found this.  Absolutely delicious!  The peanut butter just lifts it up

I've also made some walnut bread.  I can't wait for it all to be ready so I can sit down with a lovely fresh roll and some soup.  That's liven'  ;D
