I was given about 10kg of peaches this week so I have a heap of new recipes - all starring peaches!
This is a yummy, easy and very kid friendly jam
PEACH AND LIME JAM
Ingredients
500g peaches, stoned and deskinned
450g raw sugar
juice and rind of 1 lime
Method
Pop all ingredients into TM bowl. You can leave out lime rind if you like - but the juice helps it to set it. Cook at 100 degrees for 15 minutes on speed 1. Change to Varoma setting and cook for another 10 minutes on speed one. Blitz for 5 seconds on speed 7 for a smooth consistency. Pour into sterilised jars.
I have heard that you can leave the skins on but I wasn't brave enough! I'm sure you could also reduce the sugar (it's very sweet) but I think it helped it to set perfectly.

I would imagine the lime gives this a lovely flavour. I made peach and passionfruit jam last year and left the skins on. It was fine.

Only just spotted this recipe - thankyou. Will give it a go when the next variety of peaches comes in early March.

I made this jam a couple of months ago when peaches were in season and didn't really like it very much so forgot all about it. I came across it yesterday (hidden in the back of my fridge) and decided to try it again and, now that the flavours have developed, it is gorgeous! It didn't really set particularly well, but I'm still more than happy with it and look forward to finishing off the remains and, perhaps, will have another go next peach season.
