This morning I realised I hadn't made this one either so I too have made it now. Made mainly for my Mum who loves anything lemon but it was far too big for one little lady so DH and I have just had a slice with cream after lunch and it is delicious Trudy.

Do you think this recipe would work if you put the mix into individual pudding cups and steamed in the Varoma? I'm a bit obsessed with using the Varoma for steaming puddings!

Ah, thanks very much.  I have to cater for someone who only eats gluten-free and as I don't share the limitation I'm ignorant about what flour is used for what purpose as a substitute for wheat.

Doubled the recipe. Jug was very full. Wouldnt double again. They are in rhe oven now.

Made this today, cut sugar back to 1 cup and used limes. 
Everyone loved it, served it with some vanilla and raspberry icecream, would certainly make again.
