CP's Mums Pineapple Cheesecake Slice

This is a recipe I wrote down when I left home many years ago.

Ingredients:
85g butter
170g Granita biscuits
440g can crushed pineapple
1 dessertspoon gelatine powder
250g Philedelphia cream cheese
400g condensed milk
85g lemon juice


Preparation:

1.  Melt butter 2.30 mins / Speed 2 / 60o

2.  Add biscuits (breaking up abit as you add them) 3 secs / Speed 6 to combine. Press over base of a slice tin (26 x 16 approx) and refrigerate until set.

3.  Wash bowl. Drain pineapple juice into TM (reserve crushed pineapple for later). Sprinkle gelatine over the juice and not the blades  4:30 mins / 60o / Speed 1. Remove and set aside to cool.

4.  Cream Philly cheese and condensed milk 20 secs / Speed 5. Add lemon juice and cooled gelatin mix 1 min / Speed 5.

5.  Add crushed pineapple  Knead setting / 20 secs. Pour over the top of the set biscuit base and allow to set.

Variation:
Can use fruit of choice, and we have enjoyed Mango but pineapple is my favourite.

Mab19 - Made this today and it is YUM.  Might add just a tad more gelatine next time as it was a little bit "sloppy"  Will certainly be making it again.

JD - I made this before CC came out to Australia last August but this, along with some lamingtons, never got to see the light of day for my special guest.  I thought I had reviewed it but I obviously forgot to click on 'post'.   The main reason for coming back on here is to say that tonight I had a piece thawed and it was still as good as the day I made it. Very handy to be able to make desserts ahead of time and freeze individual portions for a quick dessert for unexpected visitors.

CP my DD would love this. I think you may have left out a step though, when do you add the pineapple juice mixed with gelatin back in? sorry if I'm just not reading correctly.

Its a lovely cheesecake slice I'm sure he will enjoy it. Really easy too now that its converted. Step 3, you just drain the pineapple juice out of the can straight into the TM jug. Does that read ok?

Sorry CP, but after you ave added and dissolved the gelatin you say to set it aside but I can't see where you add it back, I assume with lemon juice.

Shopping in WW today and pineapple was on special, straight away thought of this recipe and bought 5 tins... Too scared to make it though as I know I won't be able to stop eating it.
