Title: Fajita Marinade for Chicken

This goes great with stir-fried strips of capsicum and onion in home-made tortillas http://www.forumthermomix.com/index.php?topic=1756.0with a little guacamole and sour cream on the side!!  (And maybe some Mexican Quinoa! http://www.forumthermomix.com/index.php?topic=2454.msg26578;topicseen#msg26578)

Sorry, haven't converted the cups to grams yet...

1.  Mince garlic, speed 7 for 3 seconds:
- 1-2 cloves garlic

2.  Add and mix well on speed 5:
- 1/3 cup teriyaki sauce  (I know, doesn't sound very Mexican, but trust me... ;D)
- 1/4 cup olive oil
- 2 tablespoons honey
- 1/4 tsp black pepper
- 1/4 tsp liquid mesquite smoke seasoning (opt)
- juice of 1/2 a lemon
and Fajita Seasoning:
1 1/2 teaspoon Cumin ground
1/2 teaspoon Oregano dried, crushed
1/4 teaspoon Salt
1/4 teaspoon Red pepper ground
1/4 teaspoon Black pepper ground
1/8 teaspoon Garlic powder
1/8 teaspoon Onion powder

3.  Slice 4 chicken breasts in thin strips and marinate in mixture  (in a glass bowl in the fridge) for a couple of hours or overnight.  Cook in hot frypan until lightly browned.  Serve in warm tortillas with sauteed onion and capsicum strips and sour cream (opt), with guacamole on the side.  YUM!

This is the tortilla recipe from Trudy Olive which JulieO used for her enchilada recipe.
320g plain flour
1 teaspn salt
3 tblspns olive oil
1tspn baking powder
180g warm water
Put everything in the TM bowl.  Mix 10 seconds on speed 7 to combine.  Set to locked position and knead 3 minutes. Put dough onto breadmat and rest 5-10 mins.  Divide dough into 12 pieces and roll into flat rounds.  Fry in an oiled, hot frying pan until they start to brown. Turn them over and cook the other side.

Thanks to Cathy and Judy. I will definitely be trying these recipes as soon as I get my THM. This Wednesday I hope.

teriyaki sauce is bascially a soya sauce with added sugar and giner which is boiled down. Very easy to make and very nice for vegetables, noodles, rice, marinades and many more things.

I havnt tried to make it in the TM but im sure it would be very easy.

You can also add garlic as well as fresh ginger and if you want it a bit more thick add a bit of cornstarch.
