Going to make these tomorrow afternoon. Thought I would do one batch as per recipe for DS to take to school. Then another batch where I swirl the jam through the muffin mix for morning teas at the shop.
Exercise is a dirty word... Every time I hear it, I wash my mouth out with chocolate

Glad to hear that Thermo, I find my jam ends up at the bottom of the muffin when I make these (still yummy though)
My DS's teacher said it depends on the type of jam you use but didn't say which jam works better :(
Anyone else have success with the jam staying in the middle of the muffin?

I asked my DH to make me 'something yummy' and this is what he chose. Hit the spot perfectly. Only difference was the he used 130g brown sugar as per CP63. The jam he used was plum, and it sat very nicely in the middle.

Kerryn I think CP was talking about a Banana cake recipe with the 130g brown sugar.
But I guess if they still worked out fine then what's it matter what sugar you use ;D

I've made these a few times now. The first time, my jam sank to the bottom, the next time, I put the jam in on top, still sank so last time, I piped the jam in after the cooking process was all over - success!

This recipe worked great in the electric cake pop maker.....only 4 1/2 minutes to cook.



I didn't bother injecting with jam....maybe next time  :P

made this in the morning for DD's lunchbox, mixed of raw sugar and rapadura.  Six in the muffin tin and six on the muffin top without jam filling.  And I leave it plain without topping.  Both DD and DS enjoyed this, gone in no time.
