Title: Basic Tomato Soup
Post by: jessicawlondon on January 05, 2011, 11:16:17 pm
Name of Recipe: Basic Tomato Soup
Number of People: 2 (small starter portions)

Ingredients:
2 large tomatoes, chopped
1 small white onion, peeled and chopped
1 green pepper, chopped
1 garlic clove
Seasoning
1 tbsp (UK) balsamic vinegar
1/2 tbsp (UK) white wine vinegar
1 tbsp (UK) olive oil
Small knob of butter (or low fat spread)
1 1/2 tbsp (UK) Plain flour (Optional - for thickening)

Preparation:
1. Put the chopped tomatoes, onion, pepper and garlic into the TM bowl. NO HEAT/speed 9 / 2 minutes, or until pureed.
2. Add balsamic and white wine vinegars, olive oil, knob of butter and seasoning. Dependent on how watery your tomatoes were, you may at this stage need to add a little stock or water (I didn't find that I needed to). 100 deg C / 8 minutes / speed 3. During the first minute of cooking, add the flour (only necessary if the soup was too watery).

Tips/Hints:
If you prefer a smoother soup, give it a quick 'blitz' on turbo at the end. This will remove the final lumps.
UK tablespoons are 15ml in size.

This would be nice as a cold soup too.

Definitely, Cookie1 - it's a bit like a tangy gazpacho.  ;D

Think if I added some pineapple and sugar to it, it would have been good as a basic sweet and sour sauce as well.
