Mozzarrella, Tomato and Basil muffins.
Felt like different muffins and dd1 had been keen on tomato and basil the other night so made up this recipe. I really liked these as did the older two, dd3 didn't. But a really nice light muffin.
This recipe makes 24 mini muffins.
Ingredients:
200g plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 egg
200g milk
1 tomato quartered
150g mozzarella
1 1/2 tablespoons of fresh basil
20g oil
Method:
Preheat oven to 200°
Place basil in bowl and chop 4 seconds Speed 7
Add Tomato and mozzarella and chop 6 seconds Speed 6
Add flour, baking powder, baking soda, egg, milk and oil, Mix speed 4 10 seconds.
Pour into greased mini muffin tins and bake for 15 mins.

Nay-nay - Great muffin mix for breakfast and school lunches. It only made 7 large muffins so will double mix next time. Thanks Zan.
Delightful Den - I found them quite light. I felt like I wanted a bit more flavour so I think I might try adding a bit of Parmesan or swapping the mozzarella for feta.
