Still using up that roasted pork.  Tonight it was a crustless zucchini & pork quiche.

I made a Greek lamb meatball salad, with marinated olives, capsicum and a mint/yoghurt dressing.
It was delish!

We had dahl from the edc served with parmesan crumbed aubergine (I've been wanting to make this since seeing it on Junior masterchef the other week, so although a slightly odd accompaniment to dahl I bought an aubergine this morning and made it.

For me using the ratio of twice as much breadcrumbs to parmesan the parmesan flavour didn't shine through enough.

Oh Thank-you Zan......I have an 8 year old, and sometimes a hubby that wished they ate elsewhere  :-))  At least my 13 year old has evolving taste buds, and appreciates my effort most days.

Chicken kievs, mashed potato and steamed veg at our house tonight.  I have some custard left from yesterday so may do some custard tartlets for dessert.  :)

Since Spring, hubby has declared every Saturday - BBQ night........we'll see  ;)

So I am roasting some pumpkin to make a pumpkin & cumin hummus (for starters) and to wash down with some bubbles



and having a potato bake with bacon/garlic/cream & cheese to have with our home-grown lamb chump chops and Italian sausage for the grill.
Not counting calories tonight!  ;D


Oh, last night we went out for Mexican, at our favourite little place in town.  A belated 16th Wedding Anniversary dinner......with kids  ;)

Missed a couple of nights with the forum down, so the latest is ricotta gnocchi with a salami/tomato/zucchini sauce.



and last night I threw some beef/rosemary and garlic in the slowcooker, and had that shredded with gravy on fresh rolls.
