So I am back :) :) and today I bring you something very simple but very nice:
Isi's easy Crumbel Fruit Cake

With the summer come all sorts of fruit from the garden. It is always quite a lot.
Plum, peach, apricot, raspberry, cherries
This recipe is for when there are lots of fruits but not much time. Simple and delicious.
This I have done with a basket of plums which the children have brought from Grandpa.
For the dough:
150 grams margarine
100 grams sugar
1 tsp vanilla sugar
2 eggs
200 grams flour
2 teaspoons baking powder
For the crumble:
150 grams flour
75 grams sugar
1 tsp vanilla sugar
100 grams butter or margarine
Fruit of choice: apricots, plums, cherries ....(Do not forget to take the lumps ;) ;) .....)
Mix all dough ingredients together - level 4-5 and put in a greased Bakingdish.
Put the fruit as you like above (I always put a lot! ;))
Now put the ingredients for the crumble in the TMX -level 6 until desired dimension.
Spread on fruit.
Put in the Oven at 160 º C and back for 60 minuts!
VERY DIFFICULT ISN´T IT-lol :D :D

i made this with frozen raspberries last night, and it was deeelightful :D (i ended up cooking for a bit longer) it was a very light texture, and i had to slap my hand as it reached for another piece :o i look forward to trying out lots of different types of fruit. even nicer than the crumbles with rolled oats

Another great recipe Isi. I made it last night, also used frozen rasberries and it was enjoyed by everyone.

I made this for a work morning tea, with mixed frozen berries. I thought I had ruined it, as I put the dough in the springform pan, and realised that I should have used the bigger diameter one. I knew I would have to cook it longer.......and after cooking for about 90 minutes and turning up the heat, lowering the oven rack, it finally looked done. When I removed the collar of the pan though, I thought I had burnt the bottom. I was tempted to cut a slice to test, but as it was for a special occasion I didn't.
I was a complete success!!!! Sure it looked a little browner on the bottom, but it didn't taste burnt. It was a bit hit at work. I'm thinking when peaches are in season, I will do one with peaches and brown suger in the crumble.

Hallo Isi
I know it has been a while since anyone posted here, but i am about to make your great cake AGAIN - it is so easy and wonderfully tasty that i have made it many times with whatever fruit i have - even with some quince and apple.
Now I am wondering : i have some cherries but not very many, so what about putting some sort of ricotta or quarg mix in as a layer before the fruit and crumble? Do you think this would work, or do you have any ideas what could make it work?

hello - I'm planning to make this with raspberries to serve as a desert (with ice cream or custard) - do you ladies who have made it think that I can make it the day before and then heat it through just before serving? or is it best made on the day?

I made this last week with drained canned peaches. So easy and looked rather impressive. It tasted heavenly served with custard. :)

I made this cake today using Apple and Blackcurrants as the fruit filling.Delicious.

I made this today. So quick and easy and definitely a keeper!
I reduced the sugar in both parts and I made the crumble first as that came out of the bowl easily.
For the fruit I used up a good amount of frozen cherries which I rinsed off the ice crystals first, a sliced fresh nectarine, fresh peach, apricot and a few pieces of pineapple I had left over from something else I made today.
It took about 65 mins but I needed to turn the oven over to grill at the end to get the top golden.
I couldn't find my springform tin anywhere so used a normal cake tin with a liner, but I had a bit of trouble getting it out of the tin. A springform would definitely be better.
I made some custard to go with. ;D

We have some sad pears, apples and plums. I have put them out to remind me to cook them up and make a crumble. I have some frozen cherries so after reading your post JulieO I will use them too.
