What are you cooking today?

Chookie I use the treadmill and I HATE exercise.
This is the chicken breasts I stuffed and rolled and also the meat terrine I made.

I made the Cardamom & rose shortbread from the UK book on Cookidoo ‘A taste of India’.

Made the ghee yesterday in readiness and today when I blitzed the rose petals with the cardamom and sugar, the aroma of roses was lovely especially when the dough was being mixed together.

After they had cooled I couldn’t wait to have a taste.  It was just like any shortbread biscuit though maybe not as buttery as some.  I couldn’t detect cardamom or roses at all.  I was a bit disappointed to be honest as I thought I would at least get a hint of both.
 
Maybe my cardamom needed warming before I added it to bring out more flavour? Or maybe I needed to add a bit more?  Not sure, but it was the same with the rose petals.  The aroma was definitely there until baked. 

I guess I’m being picky and DH was more than happy with them so I will have another go at some stage using a bit more of the 2 ingredients.  Also if I don’t have any ghee made up I will just use butter.

They certainly do. A pity about the cardamom and rose flavours though.

I have the starter growing for a Classic Loaf.

Wow Julie, they look great.   I did some checking for you as I made some Cardamon biscuits.  The proportions were 180 g plain flour and 60 g ground almonds with 2 generous teaspoons of ground Cardamon.   Hope this helps.

Thank you everyone for you comments and Chookie for checking your recipe for me  :) The one I made has 150g plain flour and 40g of milled rice with 1/2 tsp ground cardamom, so I think I can add a bit more next time.  :D

I had one yesterday and I actually liked it better than when first made.  Still none of the flavours mentioned but the biscuit itself was lovely and there's a creaminess to it that I didn't notice at first.  I wonder if that's from using ghee compared to using normal butter? 
I remember reading to keep shortbreads in a tin in the fridge to keep them crisp and fresh which I find works really well too.

I made a recipe yesterday that needed a little chilli jam in it but I hadn't made any for years so I'm trying a recipe today from Cookidoo (tomato & chilli jam) so will see how that goes.  It has less than half the sugar compared to the Anna Langbien recipe I've made before which was far too sweet. Here's hoping.  ;D

I decided to get an early start on the chilli jam and because I had enough romas left over I made Tenina's Umami paste too which I haven't made for a while.  Had both machines going side by side which sped things up a bit  ;D  They are sitting on a board DH made that fits the top of my gas stove under the range hood which is great for steamy cooking.

The only slight change with the umami paste was I used Grana Padano instead of normal parmesan and the taste was so much nicer.

The tomato & chilli jam turned out so good.  I didn't need any extra cooking time and the consistency was just right.  Made 2 small jars plus a little left over which I'll use up first.

I'm just about to make a ham, cheese & tomato croissant for GS which I hope will keep him satisfied for at least an hour.  ;D
