Cakes / Cupcakes -help please

My grandson turning 16yr is having a birthday party for 20 people. They all go round to each others parties, so while the mothers are not trying to out do each other, the best thing is apparently decorated cupcakes
At at least $2 each and apparently they have 2 each this is rather expensive
So. Grandma to the rescue.  I am not good at making cakes, just as well as we would eat them!   Does anyone have a very fail safe cupcake recipe and how to do that beautiful icing.
How long would they keep.. if the party was on Saturday, and I am working all day Friday - could I make them Thursday??
I will do the magic bean cake for the glutenfree.
Any tips would be very very welcome!

Chit Chat / Freezer mats

Has anyone used the freezer mats which are suppose to stop the freezer from icing up.  I think you only need one for the whole freezer?  I have two freezers which I am always having to defrost (reminder to myself... next time by frost free!!) regularly

My prize which I won in the latest draw arrived today.  I sat down with a cup of coffee and had a lovely browse through it.  I am very impressed, especially as I was looking for a recipe for guests tomorrow. I wanted a side salad and found Quinoa salad with Mango salsa. Just what I wanted, especially as Quinoa was on my list to try.   It is now cooked!  Then I needed an easy light dessert, not just the panna cotta and fruit which I seemed to be doing lately.    Saffron and cardamom poached pears fits the bill perfectly fits the bill.
Thank you HQ, I am thrilled with my new book.

Chit Chat / NZ curry and rice rolls and spring rolls

Hoping someone can remember the NZ curry and rice rolls and spring rolls that you used to buy at the fish and chips shop.  DH and I have different memories of the curry and rice roll, he says it was mostly rice and no meat, and I am sure it had mince as well!  Not sure if they still make them. in the 1960s  DH and I used to go from Ohakea in our little A30 to Wellington for the weekend. We would stop at Levin and buy them.  Just feeling a bit nostalgic and was trying to make them in the Airfryer.
So mince or no mince!

Condiments and Sauces / Uni's SOS sauce

I have left over chicken and though I might make some pies in the electric pie maker.  Going through the postings I noticed people had mentioned Uni's SOS sauce.  I searched but couldn't find it.  I would love the recipe please

A lovely Christmas day with the family, though sad in a way.  Our sil stayed home with their autistic son and took him down to the beach, to give DD and Dgrandaughter time away and to enjoy their day without the stress.

Drinks / A sophisticated non alcoholic drink please

We are having a couple here for dinner and per dinner nibbles.  As they do not drink alcohol I am looking for a 'sophisticated' drink .  I had a look through the drinks section and thought that the cucumber and lemon one. Any others?  I am in Bali for another two days  and will have another look at the restaurants drink list to get ideas They are gorgeous,but mostly made from syrups with some fruit

Condiments and Sauces / Thai Green Curry Paste

I have just made this and it was delicious. It is from Fresh from the freezer, 100 delicious freezer-friendly recipes by Ghillie James
I may have to buy this book!

8 kaffir lime leaves, shredded
4 shallots, peeled and sliced (I used 2 red onions)
4 green chillies, deseeded  and chopped into 1cm chunks
4 garlic cloves, peeled
2 lemongrass stalks, trimmed
1x5cm piece of ginger, peeled
75g bunch coriander, stalks and leaves
handful of basil leaves.
1 and 1/2 tsp brown sugar
1tsp sea salt
1tsp ground coriander
3/4tsp Thai five-spice powder (optional)
2Tbs sunflower oil
2Tbs green peppercorns drained. ( I didn't have any)

Just whizz everything together except the pepperocrns,  with 2Tbs water until the mixture forms a smooth paste
Stir in the peppercorns

Freeze in ice-cube trays. ( It made about one tray)
To use
Add about 2-3 cubes per small can of coconut milk/cream

I have just bought a large seedless whole watermelon as it was so cheap... $3.20. How long will it keep if I don't cut into it?  Is it worth buying more and storing them?.  We are having a watermelon and lemon smoothie every day for breakfast
Can it be frozen?

What about Rockmelon, the same questions

Chit Chat / Autisim

I have a 11yr old grandson who is autistic. He was diagnosed when he was two.  My daughter has tried everything to help him ... reflexology, homeopathy,  diets, (he refused to eat what she had made and starved himself for several days until she gave in)  you name it she has tried it.  His behavior is now getting out of hand,  breaking doors , 6 windows, terrible melt downs and it is affecting the whole family terribly. Granddaughter may be coming to stay for most weekends just to get out of the house.
DD is now thinking seriously of getting him medicated which she has been so opposed to because of the possible side affects.. obesity, tics and more.  We are now wondering if he also could be bipolar as he is getting more highs and deep lows.

Has anyone got knowledge of the different medication used for autistic children and side affects. Unfortunately it takes several months to get an appointment with a pediatrician and I truly believe they cannot wait that long before the family splits up

I have just come back a few days camping.  The Mosquitoes were there in swarms and they love me!  Infact anything that bites love me. Once, we had just arrived a new camping site, I opened the car door and a huge horse fly flew in and bit me!  I use 'Off"  which does work to some degree and Bushmans which is very good, though it melts plastic if you have any on your hands and touch something.  I have been taking VitB for months, but that doesn't help and burn coils but I think the little beggers love the smell of them!
So... does anyone have a tried and true insect repellant  and also something to keep them away.  Even when I spray myself with Off etc, they hang around just a few few inches away looking for an unsprayed bit of skin. They even sit on the rim of my coffee cup while I am having a coffee
