Cakes / Petit Fours
« on: May 31, 2011, 06:31:13 am »
Have just been reading the blog on chocolate chip cookies, they look good.
We always have a supply of Luigi's cookies. They are consistantly good and super popular with kids and grandkids, especially if I make them into monte carlos with hazelnut/chocolate spread in centre.
Had a dinner party last week and my wife Leigh hit on the idea to make mini luigi's which I did and she topped each with the hazelnut and chocolate spread with chopped almonds sprinkled on top and there we had a plate of Petit fours to serve with the coffee. They were so popular, so easy and quick to make and they looked good.
When I make these cookies I mix for double the time stated in the recipe, the mixture is usually still not thoroughly mixed, I then put the lot in a round bottom plastic bowl and mix gently by hand..I do this with the shortbread recipe also, it is no effort.
Can't wait to try the chocolate chip cooky recipe. Just an old sweet tooth.

« on: April 06, 2011, 07:36:45 am »
Hi
We have now had our TM for about one month and it is fantastic.I am now the family cook and my wife is so happy about that.We have regular rich creamy yoghurt in abundance, great bread, cookies Uncle Luigi's are great. The Apricot/chicken risotto I made last night and it is delicious.
I keep searcing for and wondering if anyone has ever made a fruit and nut bread loaf? I guess you could make the Hot Cross Bun recipe and add more fruit and nuts
Many thanks for this Forum and friendly and helpful advice.

Chit Chat / Luigi's 40 second cookies
« on: March 20, 2011, 04:00:42 am »
Have had my TM for about 2 weeks and my wife is over the moon because I now do all the cooking.
My grandkids love the cakes and cookies I make and all is good.

Made Luigi's cookies three times  and they go like hot cakes. Made the Chocolate/hazlenut spread which was very messy, taking the skin off the nuts. Decided to join the biscuits with the spread but it was far too soft and I thought it was a failed effort. However found the spread had hardened in the fridge today (the next day)and I have joined the cookies  with the spread and they are sensational.
Making great 5 seed bread and the yoghurt is fantistic, thick and creamy.Have to make two lots of 2 litres a week to keep up with demand.

Really appreciate all of your posts. Thanks for the obvious online fellowship.

Introduce Yourself / New TM Owner
« on: March 05, 2011, 06:51:03 am »
Hi
I am a 78 year old retired male and have just bought my Tm

My TM is 10 days old and my wife said I will have to stop cooking for a while as the fridge is full. She loves it because at last I am happy to do the cooking.

I just tried to make Borsch and I am wondering if anyone else has tried the recipe in the book. The bowl wouldn't take the recommended amount of water as it would overflow. It seems to be far too much water in the recipe.

The finished soup is quite thin and my wife thought it should be thick, it still has residue of vegetables so we will strain it.Don't think I will make this again.

I am having a ball, have made great yoghurt which costs about 50cents a tub, the same size of which we have been buying at supermarket for about $3.

CAKES:  I made the orange cake and it looked great but was very dry. Can anyone recommend what cake to make resulting in a moist cake please?

The BANANA ICECREAM is fantastic.
I have been reading the Forum for a few weeks prior to buying my machine and it has been great to read.

Thanks everyone.
